Ingredients
  

  • 6 bone-in, skin-on chicken thighs - about 3 lbs or 1.4 kg total
  • 2 tbsp olive oil - or neutral oil with a high smoke point
  • 1 cup yellow onion - about 1 medium, finely diced
  • 5 cloves garlic - minced
  • 1.5 cups long-grain white rice - 285g, jasmine or basmati recommended
  • 2.5 cups low-sodium chicken broth - 600ml
  • 2 tbsp fresh lemon juice

For the Seasoning Blend

  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano
  • 1 tsp kosher salt - plus more to taste
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper - optional, for a mild kick

For Serving

  • 2 tbsp fresh flat-leaf parsley - chopped, for garnish
  • lemon wedges - for serving

Instructions
 

  • Pat chicken thighs completely dry and season all over with the spice blend. Let rest for 10-15 minutes.
  • Rinse rice in a fine mesh strainer under cold water until water runs clear. Shake well to drain.
  • Heat oil in a Dutch oven over medium-high heat. Sear chicken skin-side down for 6-8 minutes until golden, then flip and cook 3-4 minutes more. Transfer to a plate and reserve 2 tbsp of fat in the pot.
  • Reduce heat to medium and sauté onion in the reserved fat for 4-5 minutes, scraping up browned bits. Add garlic and cook 1 minute until fragrant.
  • Add rinsed rice and stir continuously for 1-2 minutes to toast until slightly opaque and fragrant.
  • Pour in chicken broth and lemon juice. Stir, scrape up any bits from the bottom, and bring to a vigorous boil. Taste and adjust seasoning.
  • Nestle seared chicken thighs skin-side up into the boiling liquid. Reduce heat to low, cover tightly, and cook for 20-22 minutes without lifting the lid.
  • Remove lid, increase heat to medium-high, and cook uncovered for 3-5 minutes to crisp the bottom rice layer. Check chicken reaches 165°F (74°C) internally.
  • Rest for 5 minutes off heat. Garnish with fresh parsley and serve with lemon wedges, scraping up the crispy rice from the bottom.

Notes

  • Dry the chicken thoroughly: Moisture on the skin prevents crispy results. Pat dry with paper towels and press firmly before seasoning.
  • Do not skip the sear: Rendering the fat from the skin is what builds deep flavor in the rice. This step is essential.
  • Use long-grain rice only: Jasmine or basmati work best. Short-grain, brown, or instant rice have different liquid ratios and will not yield the same texture.
  • Keep the lid on during simmering: Lifting the lid releases steam and disrupts the liquid-to-rice ratio. Only lift it once after 20 minutes to check.
  • Do not stir the rice once the lid is on: Stirring breaks down the starch and makes the rice gummy. Leave it undisturbed.
  • Adjust liquid for your pot: If using a very wide pot, you may need 2-4 tablespoons of extra broth. A tighter lid retains more steam.
  • Let it rest before serving: The 5-minute rest allows the chicken to reabsorb juices and the crispy bottom to set properly.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop with a splash of broth to restore moisture.
  • Variation - Vegetable-Loaded: Add 1 cup of frozen peas, diced carrots, and sliced mushrooms just before adding the broth for a heartier version.
  • Variation - Lemon Herb: Add the zest of one lemon and fresh rosemary or thyme to the broth for a Mediterranean twist.
