Ingredients
  

  • 8 oz full-fat block cream cheese - 225g, softened to room temperature
  • 1/2 cup unsalted butter - 113g, softened to room temperature
  • 3 cups powdered sugar - 360g, sifted (confectioners' sugar), plus 1 extra cup if needed
  • 2 teaspoons pure vanilla extract
  • salt - optional, a tiny pinch to balance sweetness

Instructions
 

  • Bring cream cheese and butter to room temperature. Remove from refrigerator at least 1 hour before starting. Do not microwave.
  • Beat cream cheese on medium speed for 1-2 minutes until completely smooth and free of lumps. Scrape down the bowl.
  • Add softened butter and beat on medium-high speed for 2-3 minutes until light, fluffy, and pale. Scrape down the bowl again.
  • Add vanilla extract and pinch of salt if using. Mix on low just until incorporated, about 15 seconds.
  • With mixer on low, gradually add sifted powdered sugar in 1/2 cup increments, waiting until each addition is mostly absorbed before adding more. Start with 3 cups total.
  • Increase speed to medium-high and beat for 1-2 minutes until light, fluffy, and smooth. Scrape sides and bottom one final time.
  • Adjust consistency if needed: add 1 tablespoon of heavy cream for thinner frosting, or refrigerate 15-20 minutes to firm up. Use immediately or store in refrigerator.

Notes

  • Use block cream cheese: Always use full-fat block cream cheese, not the tub variety. Tub cream cheese contains extra water and stabilizers that make frosting runny and unstable.
  • Temperature is critical: Both cream cheese and butter must be truly at room temperature. Cold ingredients cause lumps; too-warm ingredients create a soupy mess.
  • Sift the sugar: Always sift your powdered sugar before adding to avoid gritty lumps in the finished frosting. This is the single easiest step to guarantee silky results.
  • Scale it easily: Double the recipe for a three-layer cake, or halve it for a small batch of cupcakes. The ratios scale consistently and perfectly.
  • Storage: Store in an airtight container in the refrigerator for up to 5 days. Let come to room temperature for 15-20 minutes and re-whip before using.
  • Freezing: Freeze in a freezer-safe airtight container for up to 3 months. Thaw overnight in the fridge, then re-whip to restore fluffy texture.
  • Frosting warmth: If your kitchen is warm, refrigerate the frosting for 15 minutes before piping. This firms it up for cleaner, sharper edges.
  • Cool cakes completely: Never frost a warm cake. The heat will melt the frosting and cause it to slide off.
  • Flavor variations: Add 1 tablespoon of lemon zest for lemon cream cheese frosting, or 1/3 cup of cocoa powder for chocolate version. Try brown butter for nutty, caramel notes.
  • Fixing consistency: If too thin, refrigerate (do NOT add more sugar). If too thick, add 1 tablespoon of heavy cream at a time. Over-mixing after sugar is added can also loosen the texture.
