Beef back ribs cooked in the air fryer come out beautifully tender, deeply flavored, and glazed with sticky BBQ sauce in a fraction of the time of traditional methods. The secret is a two-phase cook: first, the ribs steam inside aluminum foil to lock in moisture and break down the connective tissue, then they go back in unwrapped to caramelize the BBQ sauce into that gorgeous, lacquered finish.

Ingredients
  

  • 2 lbs beef back ribs - about 900g, 1 rack, cut in half to fit air fryer
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon brown sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper - optional, for heat
  • 1/2 cup BBQ sauce - about 120ml, your favorite brand or homemade
  • 2 tablespoons water - for the bottom of the air fryer basket, plus 1 tablespoon per foil packet

Instructions
 

  • Remove the silver membrane from the back of the ribs by sliding a knife under it at one end, gripping it with a paper towel, and peeling it off in a steady pull.
  • Pat the ribs dry, then combine smoked paprika, garlic powder, onion powder, brown sugar, kosher salt, black pepper, chili powder, oregano, and cayenne in a small bowl. Drizzle ribs with olive oil, then generously apply the dry rub to all sides, pressing it in firmly.
  • Cut the rack in half if needed to fit your air fryer. Place each piece on a large sheet of heavy-duty foil, add 1 tablespoon of water per packet, and wrap tightly, crimping the edges firmly to create a sealed packet.
  • Preheat air fryer to 380°F (193°C) for 3-5 minutes. Pour 2 tablespoons of water into the bottom of the air fryer drawer or drip tray to prevent smoking.
  • Place the foil-wrapped rib packets in the air fryer basket in a single layer, bone-side down. Air fry at 380°F (193°C) for 25 minutes without opening the basket.
  • Carefully remove foil packets, open them to release steam, and check internal temperature. It should read between 185-195°F (85-90°C). Brush generously with BBQ sauce.
  • Place unwrapped, sauced ribs back in the air fryer basket, bone-side down. Air fry at 380°F (193°C) for 8-10 minutes until the sauce caramelizes and the internal temperature reaches 190-195°F (88-90°C).
  • Remove ribs from air fryer and let them rest on a cutting board for 5 minutes. Cut between the bones to separate individual ribs and serve with additional BBQ sauce on the side.

Notes

  • Remove the membrane: This is the single most important prep step. Don't skip it, as it prevents the rub from penetrating and turns chewy when cooked.
  • Don't skip the foil phase: The wrapped cook is what tenderizes the ribs. Going straight to unwrapped cooking will give you ribs that are firmer on the outside but potentially tough inside.
  • Use a thermometer, not just time: Air fryer models vary significantly. Your ribs are done when the thermometer reads 190-195°F, not necessarily at the exact minute mark.
  • Don't overcrowd the basket: Ribs need airflow around them for even cooking. If your air fryer is smaller, cook in two separate batches.
  • Apply sauce at the end only: BBQ sauce has sugar that burns quickly at high heat. Adding it too early results in a charred, bitter crust rather than a caramelized glaze.
  • Season generously: Beef ribs are a bold, fatty cut that can handle more seasoning than you might think.
  • Let them rest: Five minutes of resting time makes a significant difference in juiciness by allowing the juices to redistribute throughout the meat.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat wrapped in foil with a splash of water at 275°F for 20-25 minutes.
  • Freezing: Cool completely, wrap tightly in foil, and place in a freezer bag. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Avoid reheating in the air fryer with sauce: The sauce tends to burn at high temperatures. Reheat in the oven or a covered skillet with a splash of water instead.
