Ingredients
  

  • 6 cups seedless watermelon - 900g, roughly cubed and divided (4 cups for blending, 2 cups for texture)
  • 2 Roma tomatoes - about 300g, cored, seeded, and roughly chopped
  • 1 English cucumber - about 300g, roughly chopped and divided
  • 1 red bell pepper - about 180g, seeded and roughly chopped
  • 1 small red onion - about 80g, peeled and roughly chopped
  • 2 cloves garlic - peeled
  • 1 jalapeño pepper - seeded, optional for heat
  • 1 slice bread - crusts removed, any bread works; use gluten-free if needed
  • 3 tablespoons extra virgin olive oil - 45ml, plus more for drizzling
  • 2 tablespoons sherry vinegar - 30ml, or substitute red wine vinegar
  • 0.5 teaspoon ground cumin
  • 1 teaspoon kosher salt - plus more to taste
  • 0.25 teaspoon black pepper - freshly cracked
  • 1 handful fresh mint leaves - plus more for garnish

Instructions
 

  • Soak the bread: Remove crusts from bread slice, hold briefly under cold water for 1-2 seconds, then squeeze firmly to remove excess moisture. Set aside.
  • Prep and divide produce: Cube watermelon, reserving 2 cups for texture and a few small pieces for garnish. Core and seed tomatoes, chop and reserve 1/4 cup. Chop cucumber, reserving 1/3 cup. Chop bell pepper, reserving 1/4 cup. Mince red onion, reserving 1-2 tablespoons.
  • Blend the gazpacho base: Add remaining 4 cups watermelon, remaining tomatoes, cucumber, bell pepper, onion, garlic, jalapeño (if using), soaked bread, mint, olive oil, sherry vinegar, cumin, salt, and pepper to the blender. Blend on low for 10 seconds, then high for 60-90 seconds until completely smooth.
  • Taste and adjust seasoning: Add more salt, sherry vinegar, or cumin as needed. If too sweet, add a squeeze of lemon juice to balance.
  • Combine and add texture: Stir the reserved diced watermelon, tomato, cucumber, bell pepper, and red onion into the blended base.
  • Chill the gazpacho: Transfer to an airtight container and refrigerate for at least 3 hours or overnight for best flavor.
  • Serve and garnish: Stir well, ladle into chilled bowls, and garnish with olive oil, fresh mint, reserved diced vegetables, and croutons if desired.

Notes

  • Watermelon ripeness: Use the sweetest, ripest seedless watermelon you can find. Tap the watermelon — a deep, hollow sound signals ripeness.
  • Don't skip the bread: The soaked bread adds essential body and creaminess. Skip it and the soup will taste thin.
  • Chill everything: For maximum refreshment, place your serving bowls in the freezer for 10 minutes before serving.
  • Make ahead: This gazpacho tastes noticeably better after 12-24 hours in the fridge. The flavors marry and become more cohesive.
  • Strain for smoothness: For a restaurant-style velvety consistency, pass the blended base through a fine mesh strainer before adding mix-ins.
  • Sherry vinegar substitute: Red wine vinegar works, but sherry vinegar has a smoother, less sharp flavor that genuinely elevates the soup.
