Serving platter - large, ceramic or flat surface for presentation
- 1 French baguette - sliced into ½ inch (1.25 cm) rounds, about 16 to 20 slices
- 3 tablespoons extra virgin olive oil - 45ml, divided, for brushing and toasting
- 2 cups fresh strawberries - 300g, hulled and finely diced
- 2 tablespoons balsamic vinegar - 30ml
- 1 tablespoon granulated sugar - optional, to taste, for balancing tart berries
- ¼ teaspoon fine salt - divided, plus more to taste
- ¼ teaspoon freshly ground black pepper
- 8-10 leaves fresh basil - thinly sliced (chiffonade), plus more for garnish
- 1 cup whole milk ricotta cheese - 240g, salted and stirred until smooth
- 1 clove garlic - peeled and halved, for rubbing the bread (optional)
- balsamic glaze - store-bought or homemade, for drizzling
- flaky sea salt - optional, for finishing
Hull the strawberries, dice into ¼-inch (0.6 cm) pieces, and transfer to a medium bowl.
Add balsamic vinegar, ⅛ teaspoon salt, black pepper, and sugar (if using). Stir in the thinly sliced basil. Let rest for 10 minutes to macerate.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice the baguette diagonally into ½-inch (1.25 cm) rounds and arrange in a single layer on the baking sheet.
Brush the top of each slice generously with olive oil using a pastry brush.
Toast for 8-10 minutes until golden brown and crisp. Remove and cool for 2-3 minutes.
While still warm, rub the cut side of the garlic clove over each toasted slice (optional).
In a small bowl, stir the ricotta with the remaining ⅛ teaspoon salt until smooth and spreadable.
Spread a generous layer of ricotta onto each toasted baguette slice.
Top each slice with a heaping spoonful of the macerated strawberry mixture, allowing some syrup to drip over the ricotta.
Garnish with extra fresh basil ribbons and drizzle with balsamic glaze. Add a pinch of flaky sea salt if desired.
Transfer to a serving platter and serve immediately within 10-15 minutes of assembly.
- Best berries: Use ripe, in-season strawberries that are deeply red, fragrant, and firm but not hard for the sweetest flavor.
- Rest the topping: Don't skip the 10-minute resting time for the strawberry mixture; it allows the juices to release and the flavors to meld.
- Prevent sogginess: Assemble bruschetta just before serving. The ricotta acts as a moisture barrier, but the bread will soften after 15-20 minutes.
- Storage: Store components separately. Strawberry topping keeps for 2 days in the fridge; toasted bread lasts 2 days at room temperature; ricotta keeps for 3-4 days. Assemble fresh.
- Make it ahead: You can make the strawberry topping up to 24 hours in advance and toast the bread up to 2 days ahead. Assemble right before serving.
- Grilled option: Instead of oven-toasting, grill baguette slices over medium-high heat for 2-3 minutes per side for a smoky char.
- Cheese swaps: Substitute ricotta with goat cheese for tanginess, burrata for ultra-creamy texture, or mascarpone for a sweeter, richer flavor.
- Herb variations: Replace basil with fresh mint for a cooler, more refreshing flavor—great for brunch.
- Seasonal twist: Use diced ripe peaches in late summer for a delicious peach bruschetta version.
- DIY serving: Set up a bruschetta bar with toasted bread, ricotta, and strawberry mixture separate so guests can assemble their own pieces.
