Prep the vegetables: Dice the onion, mince the garlic, drain and rinse the kidney beans, and drain the corn. Keep the baked beans and diced tomatoes undrained.
Brown the beef: Heat olive oil in a large skillet over medium-high heat. Cook the onion for 2-3 minutes until translucent, then add garlic for 30 seconds until fragrant.
Cook the ground beef: Add beef to the skillet, breaking into crumbles. Cook for 6-8 minutes until browned. Drain excess fat, then stir in tomato paste and cook for 1 more minute.
Season the beef: Add smoked paprika, chili powder, cumin, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Stir until the beef is evenly coated.
Layer the slow cooker: Transfer the beef to a 6-quart slow cooker sprayed with non-stick spray. Top with undrained diced tomatoes, undrained baked beans, drained kidney beans, and drained corn. Stir gently to combine.
Slow cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The low and slow method is recommended for the best flavor development.
Add cheese to the base: 30 minutes before the cooking time ends, stir in 1/2 cup of shredded cheddar cheese until it melts into the sauce. Cover and cook for the remaining time.
Top with cheese: Once cooking is complete, sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top. Cover and let sit for 5-10 minutes to melt.
Serve: Ladle into bowls and serve hot with sour cream, sliced green onions, pickled jalapeños, or fresh cilantro as desired.
