Equipment

  • Large rimmed sheet pan - 18x13 inch / 46x33cm
  • Parchment paper or aluminum foil - for lining the pan
  • Large skillet or frying pan
  • Wooden spoon or spatula
  • Medium mixing bowl
  • Pastry brush or spray bottle - for oiling tortillas
  • Tongs - for flipping tacos midway
  • Meat thermometer - (optional) for checking beef doneness

Ingredients
  

  • 1 lb ground beef - 450g, 80/20 blend
  • 1 oz taco seasoning - 28g, store-bought or homemade
  • ½ cup water - 120ml
  • ½ cup refried beans - 120g, canned
  • 1 cup shredded Mexican cheese blend - 115g, divided, such as Monterey Jack, cheddar, or pre-mixed blend
  • 8 small flour tortillas - 6-inch / 15cm
  • 2 tbsp olive oil - 30ml, or cooking spray
  • ¼ cup salsa - 60g, store-bought or homemade
  • salt and pepper - to taste

For the Toppings (optional but recommended)

  • shredded lettuce
  • diced tomatoes - or fresh pico de gallo
  • sour cream
  • sliced avocado - or guacamole
  • fresh cilantro - chopped
  • lime wedges
  • hot sauce

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or foil, lightly spray or brush with oil, and set aside.
  • Cook ground beef in a large skillet over medium-high heat, breaking it apart, for 5-7 minutes until browned. Drain excess fat.
  • Reduce heat to medium. Add taco seasoning, water, and salsa to the beef. Stir and simmer for 2-3 minutes until thick and saucy. Remove from heat.
  • Wrap tortillas in a slightly damp paper towel and microwave for 20-30 seconds until warm and pliable. Keep covered until ready to use.
  • Working one at a time, brush or spray both sides of each tortilla with oil. Place them flat on the prepared baking sheet.
  • Spread 1 tablespoon of refried beans onto one half of each tortilla. Sprinkle 1-2 tablespoons of cheese over the beans. Top with 2-3 heaping tablespoons of seasoned beef. Fold in half.
  • Sprinkle the remaining cheese evenly over the tops of all folded tacos.
  • Bake on the middle rack at 425°F (220°C) for 8-10 minutes. Flip carefully with tongs and bake for another 7-10 minutes until both sides are golden and crispy.
  • Remove from oven, cool for 2-3 minutes, then serve with desired toppings like lettuce, tomatoes, sour cream, avocado, cilantro, lime, and hot sauce.

Notes

  • Drain beef well: Excess grease is the number one cause of soggy shells. Drain thoroughly after browning.
  • Warm tortillas before folding: Cold tortillas crack and split. Always microwave them wrapped in a damp paper towel first.
  • Do not overfill: Keep the beef layer thin, about ¼ inch (6mm) or less, to ensure even cooking and crispy shells.
  • Oil both sides: Lightly oil both sides of the tortilla for an even, golden crust on both sides.
  • Bake in a single layer: Do not overlap or stack tacos on the pan. Every taco needs direct contact with the hot pan.
  • Flip once: Flipping at the midpoint ensures both sides get equal browning without drying out the filling.
  • Add toppings after baking: Always add fresh toppings like lettuce and sour cream after the tacos come out of the oven to prevent sogginess.
  • Make ahead: Prepare the beef filling up to 2 days in advance. Reheat before assembling and baking.
  • Storage: Store cooled tacos (without toppings) in an airtight container in the fridge for up to 3-4 days.
  • Reheating: Best reheated in the oven at 375°F (190°C) for 8-10 minutes or in an air fryer at 375°F (190°C) for 4-5 minutes to restore crispiness. Avoid microwaving.
