For the Meatloaf

  • 2 lbs ground turkey - 900g, 93% lean recommended
  • 1 cup breadcrumbs - 115g, plain or Italian-seasoned
  • ½ cup whole milk - 120ml
  • 2 large eggs - lightly beaten
  • 1 medium yellow onion - about 1 cup or 150g, finely diced
  • 3 cloves garlic - minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil - for sautéing the onion and garlic

For the Glaze

  • ½ cup ketchup - 120ml
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly grease loaf pan or line baking sheet with parchment paper.
  • Heat olive oil in skillet over medium heat. Sauté onion for 5-7 minutes until softened and translucent. Add garlic and cook for 1-2 minutes until fragrant. Remove from heat and let cool for at least 5 minutes.
  • In a large mixing bowl, combine breadcrumbs and milk. Stir and let sit for 2-3 minutes until a paste-like consistency forms.
  • Add ground turkey, beaten eggs, cooled onion mixture, Worcestershire sauce, Dijon mustard, salt, pepper, garlic powder, onion powder, and Italian seasoning to the panade. Gently mix with clean hands or spatula until just combined. Do not over-mix.
  • Transfer mixture to prepared loaf pan, pressing evenly and smoothing the top. For a free-form loaf, shape into a 9x4 inch rectangle on a baking sheet.
  • Whisk together ketchup, brown sugar, Worcestershire sauce, Dijon mustard, and apple cider vinegar in a small bowl until smooth. Brush half the glaze evenly over the top of the meatloaf.
  • Bake on center rack for 30 minutes. Remove and brush with remaining glaze. Return to oven and bake for 20-30 more minutes until internal temperature reaches 165°F (74°C).
  • Let meatloaf rest in the pan for 10 minutes before slicing. Use a sharp knife to cut into 1-inch thick slices and serve immediately.

Notes

  • Choose the right turkey: Do not use 99% fat-free ground turkey. The small amount of fat in 93% lean turkey is essential for moisture.
  • Don't skip the panade: The breadcrumb and milk mixture is the single most important factor in preventing a dry texture.
  • Sauté aromatics first: Raw onion can produce a harsh flavor. Sautéing gives you a softer texture and sweeter, more mellow flavor.
  • Mix gently: Overworked ground turkey becomes dense and rubbery. Mix only until the ingredients are just combined.
  • Use a thermometer: Don't rely on color. The only reliable way to know your meatloaf is fully cooked is to check internal temperature of 165°F (74°C).
  • Let it rest: Skipping the 10-minute rest leads to a dry first slice as all the juices run out immediately.
  • Glaze in stages: Adding half at the start and half midway through creates a richer glaze that doesn't burn.
  • Make ahead: Assemble up to 24 hours in advance and refrigerate. A cold loaf may need 5-10 extra minutes of baking time.
  • Storage: Refrigerate cooled slices in an airtight container for up to 4 days. Freeze for up to 3 months.
