- 4 cups water - 950 ml, for brewing the tea
- 4 bags black tea - standard size; Lipton or any unflavored black tea
For the Peach Syrup
- 2 medium peaches - about 300 g, pitted and sliced (or 1 1/2 cups / 225 g frozen peach slices)
- 3/4 cup granulated sugar - 150 g; adjust to taste
- 1 cup water - 240 ml, for the peach syrup
For Finishing
- 2 cups cold water - 475 ml, or ice to dilute and chill the tea
- 1 tablespoon fresh lemon juice - 15 ml, brightens the flavor

Combine sliced peaches, 1 cup water, and sugar in a medium saucepan. Bring to a low boil, then simmer for 10-12 minutes until peaches are very soft. Remove from heat and let cool for 10 minutes.
Pour the cooked peach mixture through a fine mesh strainer, pressing on solids to extract syrup. Discard solids and set syrup aside to cool completely.
Bring 4 cups of water to a full boil. Pour over 4 black tea bags in a heat-proof pitcher and steep for exactly 5 minutes. Remove tea bags without squeezing. Let tea cool to room temperature for 15-20 minutes.
Add cold water or ice to the brewed tea. Pour in peach syrup (start with 3/4 cup) and lemon juice. Stir well and adjust sweetness to taste.
Chill in the refrigerator for at least 30 minutes. Serve over ice in tall glasses, garnished with fresh peach slices and mint if desired.
- Do not over-steep the tea: Five minutes is the sweet spot for black tea. Longer steeping produces a harsh, bitter flavor that competes with the delicate peach syrup.
- Use ripe peaches: The riper the peach, the more intense and naturally sweet your syrup will be. Peaches that are slightly soft to the touch are ideal.
- Taste your syrup before adding it all: Different peaches vary in sweetness, so the syrup strength can change batch to batch. Start with less and add more as needed.
- Add lemon juice: Even that small tablespoon makes a noticeable difference. It lifts the flavor and keeps the tea tasting fresh rather than flat or overly sweet.
- Cool the tea before refrigerating: Putting hot tea directly into the fridge can raise the fridge temperature and cause condensation inside sealed containers. Let it cool on the counter for 15 to 20 minutes first.
- Batch the syrup: The peach syrup keeps in the fridge for up to 2 weeks in a sealed jar, making it easy to whip up a fresh glass of tea any time.
- Use filtered water if possible: Tap water with a strong mineral taste can affect the flavor of both the tea and the syrup.
- Storage: Store the finished tea in a sealed pitcher in the refrigerator for up to 5 days. The flavor is at its best within the first 2 to 3 days.
- Freezing the syrup: Freeze the peach syrup in ice cube trays and transfer to a freezer bag. They keep for up to 3 months and can be added directly to glasses of brewed tea to chill and sweeten at the same time.
