Ingredients
  

  • 1.5 lbs firm white fish fillets - 680g, cod, halibut, or sea bass, cut into 1.5-inch chunks
  • 3 tablespoons extra virgin olive oil
  • 1 medium yellow onion - finely diced
  • 1 medium fennel bulb - thinly sliced, fronds reserved for garnish
  • 4 cloves garlic - minced
  • 1 large carrot - peeled and diced
  • 2 stalks celery - diced
  • 1 red bell pepper - diced
  • 14 oz crushed tomatoes - 400g, canned
  • 2 tablespoons tomato paste
  • 4 cups fish stock or seafood broth - 960ml
  • 0.5 cup dry white wine - 120ml
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 0.25 teaspoon saffron threads - bloomed in 2 tablespoons warm water
  • 0.5 teaspoon crushed red pepper flakes - adjust to taste
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • Salt and black pepper - to taste
  • 1 large lemon - juice of, about 3 tablespoons
  • 0.25 cup fresh flat-leaf parsley - 10g, roughly chopped
  • 2 tablespoons fresh dill - optional but recommended, roughly chopped
  • Fennel fronds - reserved for garnish from the fennel bulb

Instructions
 

  • Bloom the saffron by soaking the threads in 2 tablespoons of warm water for at least 10 minutes.
  • Pat the fish fillets completely dry and cut into 1.5-inch chunks. Dice all vegetables into small, even pieces and mince the garlic.
  • Heat the olive oil in a Dutch oven over medium heat, then sauté the onion and fennel for 5-6 minutes until softened.
  • Add the garlic, carrot, celery, and bell pepper, and cook for another 4-5 minutes until all vegetables are softened.
  • Add all the ground spices and oregano to the pot and stir continuously for 1-2 minutes until fragrant.
  • Pour in the white wine, scrape up any browned bits from the bottom, and let it cook for 2-3 minutes until reduced.
  • Add the crushed tomatoes, tomato paste, fish stock, bloomed saffron, and bay leaves, then bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for 15 minutes. Season with salt and pepper to taste.
  • Remove the bay leaves, gently add the fish chunks to the broth in a single layer, cover, and cook for 5-7 minutes until the fish is opaque and flakes easily.
  • Turn off the heat, squeeze in the lemon juice, stir in the fresh herbs, adjust seasonings, and serve immediately garnished with fennel fronds.

Notes

  • Fish: Use a firm white fish like cod, halibut, or sea bass. Avoid delicate fish like tilapia that fall apart in the broth.
  • Saffron: Don't skip it. Even a small pinch adds an unmistakable depth and golden hue. Bloom it properly in warm water for at least 10 minutes.
  • Toast spices: Stirring the dry spices into the oil-coated vegetables for 1-2 minutes before adding liquids dramatically intensifies the flavor.
  • Wine: Use a dry Pinot Grigio, Sauvignon Blanc, or Chardonnay. Avoid cooking wine with added salt.
  • Lemon: Always add lemon juice at the end to preserve the bright, fresh citrus note. Adding it too early can turn bitter.
  • Don't overcook: Check the fish at 5 minutes. Overcooked fish becomes rubbery and loses its delicate texture.
  • Variations: Add shrimp, mussels, white beans, or baby spinach to customize the soup to your taste.
  • Storage: Store the cooled broth (without fish) in an airtight container for up to 3 days or freeze for up to 3 months. Cook fresh fish when reheating.
  • Make ahead: The broth can be made a day ahead as the flavors deepen overnight. Reheat gently and add fresh fish just before serving.
  • Serving: Serve with crusty bread, warm pita, or a dollop of tzatziki for a complete meal.
