Ingredients
  

  • 4 boneless, skinless chicken breasts - about 6-7 oz or 170-200g each
  • 2 tablespoons olive oil - 30ml, divided for cooking
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper - optional, for extra heat

For the Mango Salsa

  • 2 large ripe mangoes - about 2 cups or 340g, diced
  • ½ cup red bell pepper - 75g, finely diced
  • ¼ cup red onion - 40g, finely diced
  • 1 jalapeño - seeded and minced (or keep seeds for more heat)
  • ¼ cup fresh cilantro - 15g, chopped
  • 2 tablespoons fresh lime juice - about 1-2 limes, plus extra for serving
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • In a small bowl, combine cumin, garlic powder, smoked paprika, onion powder, salt, black pepper, and cayenne (if using). Stir until evenly blended.
  • Pat chicken breasts completely dry with paper towels. If very thick (more than 1 inch), pound to even thickness. Drizzle with olive oil and sprinkle spice blend generously over both sides, pressing gently to adhere.
  • Heat cast iron skillet over medium-high heat for 2 minutes. Add olive oil and swirl to coat. Place chicken in pan and cook undisturbed for 5-6 minutes until golden brown and releases naturally. Flip and cook other side 5-6 minutes more.
  • Check internal temperature in thickest part with instant-read thermometer. Chicken is done at 165°F (74°C). Transfer to a plate and let rest for 5 minutes before slicing.
  • While chicken cooks, dice mangoes. Slice each mango lengthwise on either side of the flat seed. Score each half in a crosshatch pattern without cutting through skin, then invert and slice cubes into a mixing bowl.
  • Add red bell pepper, red onion, jalapeño, and fresh cilantro to the bowl with mango. Pour in lime juice and season with salt and pepper. Stir gently to combine without turning mushy. Taste and adjust seasoning.
  • Slice rested chicken against the grain into 1/2-inch thick slices. Arrange on a serving platter or individual plates. Spoon mango salsa generously over the top. Garnish with cilantro sprigs and lime wedges, and serve immediately.

Notes

  • Choose the right mango: Look for mangoes that give slightly when gently pressed at the stem end. Avoid rock hard (underripe) or very soft and wrinkled (overripe) fruit.
  • Don't skip the resting period: After cooking, always let the chicken rest for 5 full minutes before slicing. This keeps the chicken juicy instead of dry.
  • Make salsa fresh: For the best texture and flavor, make the salsa right before serving. If making ahead, keep covered in the fridge for up to 4 hours and add lime juice just before serving.
  • Control the heat level: For mild salsa, remove the jalapeño entirely or use just the flesh with seeds removed. For medium heat, use flesh with a few seeds. For maximum heat, keep all seeds.
  • Get the pan hot enough: A properly preheated skillet is the secret to a beautiful golden crust. Test by holding your hand an inch above the pan — you should feel strong heat radiating.
  • Pound thick chicken breasts: Uneven thickness causes uneven cooking. Two minutes with a mallet makes a significant difference in even cooking.
  • Storage: Store chicken and salsa separately. Cooked chicken keeps in the fridge for up to 4 days. Salsa keeps for up to 2 days (texture softens). Do not freeze fresh salsa.
  • Reheating: Reheat sliced chicken in a covered skillet over medium-low heat with a splash of broth for 2-3 minutes. Add fresh salsa after reheating, not before.
  • Meal prep tip: Cook a double batch of chicken at the start of the week and store plain in the fridge. Make fresh salsa each day for best flavor and texture.
