Equipment

Ingredients
  

  • 2 medium lemons - juice of both (about 4 tbsp or 60ml), zest of 1
  • 1 teaspoon lemon zest - from 1 lemon
  • 1 cup plain Greek yogurt - 240g, full-fat or low-fat
  • 1 medium frozen banana - about 120g, peeled and sliced before freezing
  • 2 tablespoons raw honey - 42g, or maple syrup for vegan
  • 0.5 cup unsweetened almond milk - 120ml, or any milk of choice
  • 0.5 teaspoon pure vanilla extract
  • 0.25 teaspoon ground turmeric - optional, deepens color and adds wellness benefits
  • 4-5 ice cubes - optional, for extra thickness

For Serving (Optional)

  • Lemon slices - for garnish on glass rim
  • Extra lemon zest - for dusting on top
  • Drizzle of honey - for pretty finish

Instructions
 

  • Rinse lemons, pat dry, and zest one lemon using a microplane until you have 1 teaspoon of fine zest. Cut both lemons in half and juice them to get 4 tablespoons (60ml) of fresh juice. Remove any seeds.
  • If your banana isn't frozen yet, peel a ripe banana, slice it into 1-inch pieces, and freeze for at least 2 hours before using. Measure out about 120g of frozen banana pieces.
  • Measure out the Greek yogurt, honey, almond milk, vanilla extract, and turmeric (if using). If honey is thick, microwave for 10 seconds to loosen.
  • Pour almond milk into the blender first, followed by the yogurt, lemon juice, zest, honey, vanilla, and turmeric. Top with frozen banana pieces and ice cubes.
  • Secure the lid and start blending on low speed for 10 seconds, then gradually increase to high. Blend for 45-60 seconds until completely smooth and creamy. If needed, stop and scrape down the sides with a spatula.
  • Taste and adjust sweetness with extra honey or thin with more milk if desired. Blend briefly after any additions.
  • Pour into two tall chilled glasses, garnish with lemon slices or a dusting of zest, and serve immediately for the best flavor and texture.

Notes

  • Frozen banana is key: Using a frozen banana instead of fresh gives this smoothie its thick, creamy, milkshake-like consistency. Fresh banana will result in a much thinner texture.
  • Zest before juicing: Always zest your lemon before cutting and juicing it – a whole lemon is much easier to zest than a squeezed half.
  • Use fresh lemon juice: Bottled lemon juice has a flatter, more acidic flavor. Fresh lemon juice is brighter, more aromatic, and far more delicious.
  • Warm your honey: Cold honey can clump in the blender rather than dispersing evenly. A quick 10-second microwave brings it to the right consistency.
  • Vegan option: Replace Greek yogurt with coconut yogurt or plant-based Greek-style yogurt, and swap honey for maple syrup or agave nectar.
  • Make it thicker: Add more frozen banana, a handful of ice, or 2 tablespoons of chia seeds before blending. You can also reduce the milk to 1/4 cup and add more as needed.
  • Storage: Store leftover smoothie in a sealed mason jar in the fridge for up to 24 hours. Give it a good stir or re-blend before drinking – separation is normal.
  • Freezer packs: Pre-portion the frozen banana, ice, and zest into zip-lock bags and freeze for up to 3 months. When ready, dump the bag into the blender and add yogurt, milk, and honey.
  • High-protein boost: Add one scoop of vanilla protein powder and an extra half cup of Greek yogurt for a post-workout recovery drink.
  • Flavor variations: Swap the banana for frozen mango, add berries, or toss in a handful of fresh spinach for a green smoothie – you won't taste the spinach at all.
