Ingredients
  

For the Chicken Marinade

  • 4 bone-in, skin-on chicken thighs - about 2 lbs / 900g total
  • 3 tablespoons extra virgin olive oil - 45ml
  • 2 lemons, juiced - about 4 tablespoons / 60ml
  • 1 lemon, zested
  • 4 cloves garlic - minced
  • teaspoons dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika

For the Vegetables

  • 1 lb baby gold or red potatoes - 450g, halved
  • 10 oz fresh green beans - 280g, trimmed
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Garnish

  • 1 lemon - thinly sliced
  • 2 tablespoons fresh parsley - roughly chopped
  • lemon zest - optional, for extra brightness at serving

Instructions
 

  • Make the lemon herb marinade by whisking olive oil, lemon juice, lemon zest, garlic, dried rosemary, dried thyme, garlic powder, onion powder, salt, pepper, and paprika in a small bowl.
  • Pat chicken thighs dry with paper towels, then coat with two-thirds of the marinade in a bowl or zip-top bag. Refrigerate for at least 30 minutes, or up to 4 hours.
  • Preheat oven to 425°F and line a large rimmed baking sheet with parchment paper.
  • Toss halved potatoes with remaining marinade, olive oil, salt, and pepper. Spread cut side down on one half of the prepared baking sheet.
  • Arrange marinated chicken thighs skin side up on the other half of the baking sheet. Lay lemon slices over and around the chicken and potatoes.
  • Roast chicken and potatoes for 20-25 minutes until potatoes are starting to soften and chicken skin turns golden.
  • Toss green beans with olive oil, salt, and pepper. Remove pan from oven, scatter green beans around the chicken and potatoes, and return to oven.
  • Roast for 15-20 more minutes until chicken reaches 165°F internal temperature and vegetables are tender. Broil for 2-3 minutes for extra crispy skin if desired.
  • Rest for 5 minutes, then garnish with fresh parsley and extra lemon zest before serving directly from the pan.

Notes

  • Don't skip drying the chicken skin: Patting the chicken dry before marinating is the single biggest factor in achieving crispy, golden skin. Wet skin steams; dry skin browns.
  • Use a large enough pan: Overcrowding causes everything to steam instead of roast. If your pan feels packed, use two pans to give everything room to breathe.
  • Cut potatoes uniformly: Halving the baby potatoes ensures they all finish cooking at the same time. Irregular sizes mean some will be overdone while others are still hard.
  • Place potatoes cut side down: The flat, cut surface in direct contact with the hot pan creates a golden, slightly crispy texture that's far better than a soft, steamed potato.
  • Reserve marinade before touching raw chicken: Never reuse marinade that has been in contact with raw poultry. The reserved portion for the potatoes should be set aside before the chicken touches any of it.
  • Add delicate vegetables later: Green beans cook much faster than potatoes. Adding them partway through prevents them from getting soggy or over-roasted.
  • Let the oven preheat fully: Putting the pan into a fully preheated 425°F oven gives everything an immediate blast of heat, which is how you get those caramelized, roasted edges on the vegetables.
  • For the juiciest chicken: While 165°F is safe, pulling bone-in thighs at 170-175°F often produces better texture and more tender meat thanks to the collagen breaking down.
  • Make it ahead: The assembled, fully cooked dish can be stored in the refrigerator for up to 4 days. Reheat in the oven at 375°F for best results.
  • Swap vegetables freely: Asparagus, zucchini, bell peppers, Brussels sprouts, and carrots all work well. Add tender vegetables during the final 12-15 minutes of roasting.
