Ingredients
  

  • 4 fresh peaches - ripe but firm, freestone variety preferred, halved and pitted
  • 2 tablespoons unsalted butter - 30g, melted
  • 2 tablespoons light brown sugar - 25g, packed
  • 0.5 teaspoon ground cinnamon
  • 1 pinch fine sea salt
  • 1 teaspoon pure vanilla extract

For Serving

  • vanilla ice cream - for serving
  • raw honey - optional but highly recommended, for drizzling
  • fresh mint leaves - optional, for garnish

Instructions
 

  • Preheat your outdoor gas grill to medium heat (375-400°F / 190-204°C). If using a charcoal grill, light the coals and let them burn until covered with white ash, then spread them evenly. For an indoor cast iron grill pan, preheat it over medium heat for 3-4 minutes.
  • In a small mixing bowl, combine the melted butter, brown sugar, cinnamon, and vanilla extract. Stir well until the sugar is mostly dissolved and everything is evenly incorporated.
  • Wash the peaches and pat them dry. Using a sharp chef's knife, cut each peach in half along the natural seam and twist to separate. Remove the pit (easily pops out for freestone peaches; carefully dig out with a spoon or paring knife for clingstone).
  • Using a pastry brush, generously coat the cut (flat) side of each peach half with the butter mixture, making sure to cover the entire surface including the rim and pit cavity.
  • Place each peach half cut-side down on the preheated grill grates or grill pan. Cook undisturbed for 3 to 5 minutes until you see clear, defined grill marks and lightly golden edges.
  • Using tongs, gently flip each peach half skin-side down and grill for an additional 2 to 3 minutes until tender but still holding their shape. Add a pinch of sea salt if desired, then remove from the grill.
  • Place 1-2 grilled peach halves on each serving plate, add a generous scoop of vanilla ice cream, drizzle with honey, and garnish with fresh mint leaves. Serve immediately while warm.

Notes

  • Choose the right peaches: Select peaches that are ripe but still firm. If they give slightly when pressed, they're perfect. Overripe peaches will turn mushy on the grill.
  • Freestone peaches are best: Varieties like Reliance, Redhaven, or Contender have pits that pull out cleanly, making them much easier to work with.
  • Don't skip the butter: Butter prevents sticking and contributes to a deep, caramelized crust. Olive oil can substitute, but the flavor won't be as rich.
  • Preheat properly: Always give your grill at least 10-15 minutes to fully preheat before cooking to ensure proper caramelization.
  • Don't rush the grill marks: Let the peaches sit undisturbed for a full 3-4 minutes before checking. Moving them too soon tears the fruit and ruins the caramelization.
  • Watch the heat: If you smell burning sugar, your heat is too high. Medium heat is the sweet spot for gentle caramelization without scorching.
  • Indoor option: A cast iron grill pan works beautifully if you don't have an outdoor grill. Results are very close to the real thing.
  • Storage: Store leftover grilled peaches in an airtight container in the refrigerator for up to 3 days. Reheat on a grill or grill pan for 1-2 minutes, or microwave for 30-45 seconds.
  • Freezing: Freeze grilled peaches for up to 2 months. Place cooled halves on a baking sheet, freeze until solid, then transfer to a freezer-safe bag.
