Ingredients
  

  • 1 lb ground turkey - 450g, 93% lean recommended
  • 0.5 cup almond flour - 50g, finely ground/blanched, not almond meal
  • 0.25 cup Parmesan cheese - 25g, freshly grated
  • 1 large egg
  • 2 cloves garlic - about 1 teaspoon, minced
  • 2 tablespoons fresh parsley - finely chopped (or 1 teaspoon dried)
  • 1 teaspoon Italian seasoning - dried
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes - optional, for mild heat
  • 1 tablespoon olive oil - for brushing the baking sheet

For Serving

  • marinara sauce - or your favorite tomato sauce
  • gluten free pasta - or zucchini noodles

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper and lightly brush or spray with olive oil to prevent sticking.
  • In a large bowl, combine the almond flour, Parmesan, Italian seasoning, onion powder, garlic powder, salt, pepper, and red pepper flakes (if using). Stir with a fork until evenly mixed.
  • Add the egg, minced garlic, and parsley to the dry mixture. Lightly beat the egg with a fork and stir everything together before adding the meat.
  • Add the ground turkey to the bowl. Use slightly dampened hands or a fork to mix just until all ingredients are incorporated. Be careful not to overmix or the meatballs will become dense and tough.
  • Portion the mixture onto the prepared baking sheet using a 1.5-tablespoon cookie scoop. Space them at least 1 inch apart. Gently roll each portion into a smooth ball using dampened hands.
  • Bake on the center rack for 18 to 22 minutes, until the exterior is lightly golden and firm to the touch. Use an instant-read thermometer to confirm the internal temperature reaches 165°F (74°C).
  • Let the meatballs rest for 3 to 5 minutes before serving. For extra flavor, transfer to simmering sauce and heat together for 5 to 10 minutes. Serve immediately over gluten free pasta or zucchini noodles.

Notes

  • Use 93% lean ground turkey for the best moisture. The extra fat compared to 99% lean keeps the meatballs from drying out in the oven.
  • Always use finely ground blanched almond flour, not almond meal. Almond meal is coarser and can make the meatballs crumbly and gritty.
  • If the mixture is too sticky to roll, refrigerate it for 10 to 15 minutes. Cold meat firms up and is much easier to handle.
  • Freshly grate your Parmesan instead of using the pre-shredded kind. It melts more evenly and doesn't contain anti-caking agents that can affect texture.
  • Check the internal temperature with a meat thermometer every time. Ground turkey must reach 165°F (74°C) to be safe, and color alone is not a reliable indicator.
  • To make dairy-free, omit the Parmesan and replace with 2 tablespoons of nutritional yeast for a similar savory depth.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days. They freeze beautifully for up to 3 months.
  • To reheat, add to a skillet with a splash of water or broth and warm over medium-low heat, covered, for 5 to 7 minutes to restore moisture.
  • For a spicy version, double the red pepper flakes and add a pinch of cayenne for extra heat.
  • Use a cookie scoop for evenly sized meatballs so they all cook at the same rate, giving you consistent results every time.
