Ingredients
  

  • 2 cups all-purpose flour - 250g
  • 1/4 cup granulated sugar - 50g
  • 1 tsp baking powder
  • 1/4 tsp fine salt
  • 1/2 cup cold unsalted butter - 115g, cut into small cubes
  • 1 large egg
  • 1 tsp pure vanilla extract

For the Peach Layer

  • 4 medium fresh peaches - about 2 lbs or 900g, peeled, pitted, sliced into 1/2-inch wedges; OR 2 cans (15 oz/425g each) canned peach slices, drained and patted dry
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon

For the Sour Cream Custard

  • 3 large eggs
  • 1 cup full-fat sour cream - 240ml
  • 1/2 cup granulated sugar - 100g
  • 1 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • fine salt - pinch

For Garnish

  • 1 tbsp powdered sugar - for dusting, or 2 tbsp

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9-inch springform pan and line the base with parchment paper.
  • Whisk together flour, 1/4 cup sugar, baking powder, and salt. Cut in cold butter until crumbly. Add egg and vanilla, mixing just until dough comes together.
  • Press dough evenly into the pan, bringing it up the sides about 1.5 inches high. Prick with a fork and chill while preparing peaches.
  • Peel and slice fresh peaches, or drain canned peaches thoroughly and pat dry. Toss slices with 2 tbsp sugar and 1/2 tsp cinnamon.
  • Arrange peach slices over the chilled crust in a single overlapping layer, starting from the edge and working inward.
  • Whisk eggs, sour cream, 1/2 cup sugar, vanilla, 1/4 tsp cinnamon, and a pinch of salt until completely smooth.
  • Pour custard slowly over the peaches, gently shaking the pan to settle it evenly between the fruit.
  • Bake for 50 to 60 minutes, until custard is set and no longer jiggles in the center. Tent with foil if browning too quickly.
  • Cool in pan for 20 minutes on a rack. Release the springform, dust with powdered sugar, and serve warm or at room temperature.

Notes

  • Keep butter cold: Cold butter creates the tender, crumbly crust. If it softens too much, refrigerate the dough for 10 minutes before pressing.
  • Drain canned peaches thoroughly: Excess moisture prevents the custard from setting. Drain, pat dry with paper towels, then drain again if needed.
  • Line pan with parchment: This ensures clean release every time—don't skip it.
  • Press crust evenly: Uneven thickness leads to uneven baking. Smooth the base and build sides to a consistent height.
  • Avoid overbaking: The custard should just be set in the center. It will continue to firm as it cools on the rack.
  • Let it cool before slicing: Cutting into warm custard causes it to run. Wait 20-30 minutes for clean slices.
  • Fresh or canned peaches: Both work well. If using frozen, thaw, drain, and pat completely dry before using.
  • Storage: Store covered in the refrigerator for up to 4 days. The flavors deepen overnight.
  • Reheat: Warm individual slices in a 300°F oven for 10 minutes. Avoid microwaving for best texture.
  • Variations: Swap peaches for plums, cherries, or apples. Add blueberries for a two-toned filling.
