Ingredients
  

  • 2.5 lbs chicken wings - 1.1kg, separated into drumettes and flats
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon baking powder - Aluminum-free preferred
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper

For the Garlic Lime Sauce

  • 3 tablespoons unsalted butter
  • 5 cloves garlic - finely minced
  • 3 tablespoons fresh lime juice - about 2 limes
  • 1 teaspoon lime zest
  • 1 tablespoon honey
  • 1 tablespoon hot sauce - such as Frank's RedHot or Cholula
  • 0.5 teaspoon salt

Instructions
 

  • Pat the chicken wings completely dry with paper towels. For extra crispy skin, arrange on a wire rack over a baking sheet and air-dry uncovered in the refrigerator for 1-2 hours.
  • Position oven rack in the upper-middle and preheat to 400°F (200°C).
  • In a large bowl, toss the wings with vegetable oil, garlic powder, onion powder, paprika, baking powder, salt, and black pepper until evenly coated.
  • Arrange the seasoned wings in a single layer on a wire rack set inside a rimmed baking sheet, leaving space between each wing.
  • Bake for 25 minutes, flip each wing with tongs, then continue baking for 20-30 minutes until deep golden brown and crispy. For extra crispiness, broil for the last 3-4 minutes.
  • While wings bake, melt butter in a small saucepan over medium-low heat. Add minced garlic and cook for 1 minute until fragrant. Stir in lime juice, honey, hot sauce, and salt. Simmer for 2-3 minutes, then remove from heat and stir in lime zest. Let cool to room temperature.
  • Remove wings from the oven and rest on the rack for 5 minutes. Transfer to a large bowl, pour over the sauce, and toss thoroughly to coat. Garnish with cilantro and lime wedges, and serve immediately.

Notes

  • Dry the wings thoroughly: Excess moisture prevents crispy skin. Pat wings aggressively with paper towels before seasoning.
  • Use baking powder, not baking soda: They are not interchangeable. Baking powder crisps the skin; baking soda will make wings taste soapy.
  • Make sauce ahead: The sauce can be made hours in advance. Let it cool to room temperature before tossing with hot wings to preserve crispiness.
  • Don't overcrowd the pan: Leave space between wings for proper air circulation. Use two pans if making a large batch.
  • Add lime zest off-heat: Zest added to simmering sauce turns bitter. Always stir it in after removing from heat.
  • Adjust the sauce to taste: Add more lime juice for tang, honey for sweetness, or hot sauce for extra heat.
  • Rest before saucing: Let wings rest for 5 minutes after baking to help maintain crispy skin when tossed with sauce.
  • Air fryer variation: Cook seasoned wings at 390°F (198°C) for 18-22 minutes, flipping halfway, then toss in sauce.
  • Make ahead for parties: Bake wings up to 24 hours ahead, store uncovered in refrigerator, then reheat in a 400°F oven for 10-15 minutes before saucing.
