Ingredients
  

  • 1 cup mayonnaise - 240ml, use quality brand like Duke's
  • 3 tablespoons dill pickles - 30g, finely chopped
  • 1 tablespoon dill pickle juice - 15ml
  • 2 tablespoons capers - 20g, finely chopped
  • 1 tablespoon shallot or white onion - 10g, finely chopped
  • 1 tablespoon fresh parsley - 3g, finely chopped
  • 1 tablespoon fresh dill - 3g, finely chopped
  • 2 teaspoons fresh lemon juice - 10ml, strained
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon Worcestershire sauce
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon kosher salt
  • teaspoon hot sauce - optional

Instructions
 

  • Finely chop the dill pickles into small pieces, about ⅛ inch (3mm) in size. Drain and chop the capers, mince the shallot or onion, and chop the fresh parsley and dill, removing tough stems. Strain the fresh lemon juice.
  • Add the mayonnaise to a medium mixing bowl along with the Dijon mustard, fresh lemon juice, and Worcestershire sauce. Whisk together until smooth and well combined.
  • Fold in the chopped dill pickles, pickle juice, chopped capers, minced shallot, fresh parsley, and fresh dill. Add black pepper, salt, and hot sauce if using.
  • Stir everything together gently but thoroughly until all ingredients are evenly distributed. Taste and adjust seasoning with more lemon juice, pickles, or salt as desired.
  • Transfer the tartar sauce to an airtight container and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Stir briefly before serving and enjoy chilled with your favorite seafood dishes.
