Ingredients
  

  • 1 large cucumber - about 300g or 10.5 oz, peeled and grated
  • 0.5 tsp fine salt - 2.5g, divided (for salting cucumber and seasoning)
  • 2 cups full-fat plain yogurt - 480g, Greek or regular
  • 1 clove garlic - finely minced or grated
  • 2 tbsp fresh cilantro - 8g, finely chopped
  • 2 tbsp fresh mint leaves - 8g, finely chopped
  • 0.5 tsp ground cumin - 1.2g
  • 0.25 tsp ground coriander - 0.6g, optional but recommended
  • 0.25 tsp black pepper - 0.5g, freshly ground
  • 0.25 tsp chaat masala - 0.6g, optional, for an extra tangy kick
  • cayenne pepper - optional, for heat
  • fresh mint sprigs - for garnish
  • cumin - for garnish
  • paprika - for garnish
  • extra virgin olive oil - cold-pressed, optional, for serving

Instructions
 

  • Wash the cucumber, peel it, cut in half lengthwise, scoop out the seeds, and grate it using a box grater.
  • Sprinkle 1/4 tsp of fine salt over the grated cucumber, let it sit for 10 minutes, then squeeze out as much liquid as possible using cheesecloth or a fine mesh strainer.
  • Finely mince or grate the garlic clove, and finely chop the fresh mint and cilantro.
  • Toast the ground cumin in a dry skillet over medium heat for 30 to 45 seconds until fragrant, then transfer to a small bowl to cool.
  • In a large mixing bowl, combine the yogurt with the minced garlic, toasted cumin, ground coriander, black pepper, remaining salt, and optional cayenne and chaat masala. Stir thoroughly.
  • Fold the drained cucumber, chopped cilantro, and mint into the seasoned yogurt gently until just combined.
  • Cover and refrigerate for at least 15 minutes before serving to allow the flavors to meld.
  • Before serving, stir gently, transfer to a serving bowl, and garnish with fresh mint sprigs, a dusting of cumin or paprika, and a light drizzle of olive oil if desired.

Notes

  • Always salt and drain the cucumber for at least 10 minutes. Skipping this is the number one reason raita turns out watery. Squeeze until the cucumber feels almost dry.
  • Use full-fat yogurt for the richest, creamiest texture and best flavor. Low-fat or non-fat versions will result in a thinner, less satisfying raita.
  • Toasting the cumin for 30–45 seconds in a dry pan intensifies its flavor significantly and is highly recommended.
  • For the best flavor and texture, make the raita up to 24 hours in advance and store it in the fridge. The flavors will deepen and meld together beautifully.
  • If making ahead, consider folding in the drained cucumber closer to serving time to maintain the freshest texture.
  • If you're not a fan of cilantro, substitute with extra mint or use flat-leaf parsley for a different herbaceous note.
  • Raita is always served cold. Do not heat or microwave it, as the yogurt will curdle and separate.
  • Get creative with variations by swapping cucumber for boondi, onion, tomato, beetroot, or mango. The same seasoned yogurt base works perfectly for all.
  • Store any leftover raita in an airtight container in the refrigerator for up to 2 to 3 days. Stir well before serving and drain off any pooled liquid that may have accumulated.
  • Use raita not just as a side for curries, but also as a dip for vegetables, a sauce for grilled meats, or a dressing for salads.
