  • 2 lbs boneless, skinless chicken breasts - 907g, about 3-4 medium breasts
  • 1 ½ cups chunky salsa - 375ml / about 16 oz jar, mild, medium, or hot
  • 1 packet taco seasoning - 1 oz / 28g
  • 1 teaspoon garlic powder - 5ml
  • ½ teaspoon cumin - 2.5ml
  • ½ teaspoon smoked paprika - 2.5ml
  • ½ teaspoon salt - 2.5ml, or to taste
  • ¼ teaspoon black pepper - 1.25ml
  • 1 lime - juiced, added at the end

Optional Add-ins (stir in during the last hour of cooking)

  • 1 can black beans - 15 oz / 425g, drained and rinsed
  • 1 cup frozen or canned corn - 240ml, drained
  • 1 block cream cheese - 8 oz / 225g, cut into cubes (for creamy version)
  • 1 packet ranch seasoning mix - for ranch salsa chicken version
  • 2 lbs boneless, skinless chicken thighs - 907g, as a substitute for breasts
  • 1 jalapeño - diced, for spicy version
  • 1 pinch cayenne pepper - for spicy version

Instructions
 

  • Lightly spray the inside of a 6-quart slow cooker with nonstick cooking spray for easier cleanup.
  • Place the chicken breasts in a single layer in the crockpot. Sprinkle taco seasoning, garlic powder, cumin, smoked paprika, salt, and pepper evenly over the chicken, pressing gently to adhere.
  • Pour the entire jar of chunky salsa over the seasoned chicken, spreading it to cover as completely as possible.
  • Place the lid securely on the crockpot. Cook on LOW for 6-7 hours or on HIGH for 3-3.5 hours, until the chicken is tender and shreds easily. Avoid lifting the lid during cooking.
  • Check the internal temperature with an instant-read thermometer; it should read 165°F (74°C). If using optional add-ins like black beans or corn, stir them in now and cook for another 20-30 minutes.
  • Carefully remove the chicken to a cutting board and shred with two forks or meat claws. The chicken should fall apart easily.
  • Return the shredded chicken to the crockpot and stir to coat in the salsa juices. Squeeze fresh lime juice over everything and stir again. Taste and adjust seasoning if needed.
  • Set the crockpot to WARM until you are ready to serve. Use the chicken in tacos, burrito bowls, nachos, quesadillas, enchiladas, or salads.

Notes

  • Choose a chunky salsa: Thinner salsas break down too much during cooking. A chunky salsa keeps its texture and creates a thicker, more flavorful coating.
  • Don't skip the lime: Fresh lime juice added at the end brightens the flavors and ties everything together beautifully.
  • Avoid overcooking: Chicken breasts can become dry if cooked too long. Check at the lower end of the time range and remove once it shreds easily.
  • Use an instant-read thermometer: Visual doneness cues can be unreliable in a slow cooker. 165°F (74°C) guarantees perfectly cooked chicken.
  • Shred while warm: Chicken shreds most easily while still hot. If it cools, it becomes harder to pull apart.
  • Save cooking liquid: Stir a few tablespoons of the salsa juices back into the shredded chicken to keep it moist, especially for meal prep.
  • Make it creamy: Add an 8 oz block of cream cheese (cut into cubes) during the last 30 minutes of cooking for a rich, creamy sauce.
