Ingredients
  

  • 2 lbs carrots - 900g, peeled and roughly chopped
  • 1 large yellow onion - diced
  • 4 cloves garlic - minced
  • 3 stalks celery - roughly chopped
  • 2 tablespoons olive oil or unsalted butter
  • 4 cups vegetable broth - 960ml, or low-sodium chicken broth
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt - plus more to taste
  • 1/4 teaspoon black pepper
  • 1/3 cup heavy cream - 80ml, optional but recommended
  • 1 tablespoon fresh lemon juice
  • fresh parsley or chives - for garnish
  • extra drizzle of cream or sour cream - for serving, optional

Instructions
 

  • Peel and chop carrots into 1-inch pieces. Dice onion and celery, mince garlic, and have all spices measured before starting.
  • Heat olive oil or butter in a large pot over medium heat. Add onion and celery and cook, stirring occasionally, for 7-8 minutes until soft and translucent. Add garlic and cook 1-2 minutes until fragrant.
  • Add chopped carrots, cumin, smoked paprika, ground ginger, salt, and pepper. Stir to coat vegetables in spices and toast for about 1 minute.
  • Pour in broth, scrape up any browned bits, and bring to a boil. Reduce heat, cover partially, and simmer for 20-25 minutes until carrots are very tender.
  • Remove from heat and cool for 5 minutes. Blend with an immersion blender until completely smooth. If using a countertop blender, blend in batches, filling no more than halfway.
  • Return soup to low heat if needed. Stir in heavy cream in a slow stream, then add lemon juice. Adjust seasoning with salt, pepper, or more lemon juice to taste.
  • Ladle into warm bowls, garnish with fresh parsley or chives, and drizzle with additional cream or sour cream if desired. Serve with crusty bread.

Notes

  • Make it dairy-free: Swap heavy cream for full-fat coconut milk or omit it entirely. Use olive oil instead of butter and vegetable broth.
  • Roasted variation: Toss carrots, onion, and garlic in olive oil and roast at 425°F for 25-30 minutes before adding to broth for deeper caramelized flavor.
  • Add protein: Stir in 1/3 cup of rinsed red lentils along with the broth for extra thickness and plant-based protein.
  • Storage: Store cooled soup in an airtight container in the refrigerator for up to 4-5 days. The flavor deepens overnight.
  • Freezing: Freeze in containers or zip-top bags with 1 inch headspace for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Reheating: Warm on the stovetop over medium-low heat, adding a splash of broth or water if the soup has thickened.
  • Avoid bitterness: Don't let the garlic brown during sauteing, and use fresh, firm carrots for the sweetest flavor.
  • Spice variations: Replace cumin and paprika with 1-1.5 teaspoons curry powder for a curried version, or add 1 tablespoon fresh grated ginger for a carrot ginger soup.
