- 4 cups sweet corn kernels - 580g, fresh or frozen
- 1 medium yellow onion - about 1 cup or 150g, diced
- 3 cloves garlic - minced
- 1 medium Yukon Gold potato - about 200g or 7 oz, peeled and diced into 1/2-inch cubes
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cups low-sodium chicken broth - 950ml, or vegetable broth for a vegetarian version
- 1/2 teaspoon salt - plus more to taste
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1/2 cup heavy cream or half-and-half - 120ml, optional, for a richer finish
- 2 tablespoons fresh chives or flat-leaf parsley - chopped, for garnish
- fresh lemon juice - a squeeze, to brighten the flavors at the end

Dice the onion, mince the garlic, peel and cube the potato, and cut fresh corn kernels off the cobs if using fresh corn.
Melt butter and olive oil in a large pot over medium heat. Add the diced onion and cook for 5-7 minutes until soft and translucent. Add the minced garlic and cook for 1 minute until fragrant.
Add the diced potato and sweet corn kernels to the pot. Stir in smoked paprika, salt, and pepper. Cook for 3-4 minutes, stirring occasionally.
Pour in the chicken or vegetable broth and bring to a gentle boil. Reduce heat to medium-low and simmer uncovered for 15-18 minutes until the potato is fork-tender.
Turn off the heat. Using an immersion blender, blend about half the soup directly in the pot for 30-45 seconds until creamy while still leaving whole corn kernels and potato pieces.
Stir in heavy cream or half-and-half if using. Add a squeeze of fresh lemon juice. Taste and adjust salt and pepper as needed. Return to low heat for 2-3 minutes to warm through if necessary.
Ladle the hot corn soup into bowls. Garnish with fresh chives or parsley and any desired toppings like chili oil, smoked paprika, or shredded cheddar. Serve immediately with crusty bread on the side.
- Don't Overcook: Corn loses its sweetness when simmered too long. Keep the simmer gentle and stick to the 15-18 minute window.
