- 1/4 cup fresh flat-leaf parsley - 15g, finely chopped

Prepare the chicken: slice each breast horizontally to make 4 thin cutlets about 1/2 inch thick. If needed, pound to even thickness. Pat dry, season with salt and pepper, then dredge in flour, shaking off excess.
Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil and 1 tablespoon butter. Once foaming, add 2 cutlets and cook undisturbed for 3-4 minutes until deep golden brown. Flip and cook 2-3 minutes more until cooked through. Transfer to a plate and repeat with remaining oil and chicken.
