Equipment

  • Large skillet or Dutch oven (12-inch) - Works best for even cooking
  • Wooden spoon or spatula - For breaking up meat
  • Sharp knife and cutting board
  • Measuring cups and spoons
  • Small bowl - Optional for mixing sauce ingredients
  • Ladle or large spoon - For serving
  • Griddle or separate pan - For toasting buns

Ingredients

  • 1 1/2 pounds ground beef - 680g, 80/20 or 85/15 blend
  • 1 medium yellow onion - about 1 cup / 150g, finely diced
  • 1 medium green bell pepper - about 1 cup / 150g, finely diced
  • 3 cloves garlic - minced
  • 1 tablespoon olive oil - or butter

For the Sauce

  • 1 cup ketchup - 240ml
  • 1/2 cup tomato sauce - 120ml
  • 2 tablespoons tomato paste
  • 3 tablespoons brown sugar - adjust to taste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes - optional, for heat
  • salt and black pepper - to taste
  • 1/4 cup water - 60ml, adjust for desired consistency

For Serving

  • 6-8 hamburger buns - toasted
  • butter - for toasting buns
  • pickles - optional topping
  • sliced cheese - optional topping
  • coleslaw - optional topping

Instructions

  • Dice the onion and green bell pepper into small 1/4-inch pieces, mince the garlic, and measure out all sauce ingredients.
  • Heat a large skillet over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it into small crumbles until fully browned. Drain excess fat.
  • Return the skillet to medium heat. Add olive oil or butter, then sauté the diced onion and green bell pepper for 4-5 minutes until softened. Add garlic and cook 30-60 seconds until fragrant.
  • Add the drained beef back to the skillet with the vegetables. Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.
  • Stir in the ketchup, tomato sauce, water, brown sugar, Worcestershire sauce, mustard, vinegar, and all spices. Mix until smooth and well combined.
  • Simmer uncovered on medium-low for 10-15 minutes, stirring occasionally, until the sauce thickens. Adjust consistency with water and taste for seasoning.
  • While simmering, butter the cut sides of the buns and toast on a hot griddle or skillet for 2-3 minutes until golden and crispy.
  • Scoop a generous portion of the sloppy joe mixture onto each toasted bun bottom. Add optional toppings if desired, top with the other bun half, and serve immediately with napkins.

Notes

  • Choose 80/20 or 85/15 ground beef for the best flavor and juiciness; leaner meat can dry out.
  • Always drain excess fat after browning the beef to prevent an oily sauce.
  • Dice vegetables finely so they distribute evenly and are easy to eat in the sandwich.
  • Cook the tomato paste briefly to remove any raw taste and enhance flavor.
  • Adjust brown sugar, vinegar, or spices to taste—different ketchups vary in sweetness.
  • Simmer uncovered to allow the sauce to thicken properly.
  • Buttered, toasted buns are essential to prevent sogginess and add great flavor.
  • Let the mixture rest off heat for 5 minutes before serving for better flavor melding.
  • Store leftovers in the refrigerator up to 4 days or freeze up to 3 months.
  • Great make-ahead recipe; flavors improve after refrigerating overnight.
