Dice the onion and green bell pepper into small 1/4-inch pieces, mince the garlic, and measure out all sauce ingredients.
Heat a large skillet over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it into small crumbles until fully browned. Drain excess fat.
Return the skillet to medium heat. Add olive oil or butter, then sauté the diced onion and green bell pepper for 4-5 minutes until softened. Add garlic and cook 30-60 seconds until fragrant.
Add the drained beef back to the skillet with the vegetables. Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.
Stir in the ketchup, tomato sauce, water, brown sugar, Worcestershire sauce, mustard, vinegar, and all spices. Mix until smooth and well combined.
Simmer uncovered on medium-low for 10-15 minutes, stirring occasionally, until the sauce thickens. Adjust consistency with water and taste for seasoning.
While simmering, butter the cut sides of the buns and toast on a hot griddle or skillet for 2-3 minutes until golden and crispy.
Scoop a generous portion of the sloppy joe mixture onto each toasted bun bottom. Add optional toppings if desired, top with the other bun half, and serve immediately with napkins.
- Choose 80/20 or 85/15 ground beef for the best flavor and juiciness; leaner meat can dry out.
- Always drain excess fat after browning the beef to prevent an oily sauce.
- Dice vegetables finely so they distribute evenly and are easy to eat in the sandwich.
- Cook the tomato paste briefly to remove any raw taste and enhance flavor.
- Adjust brown sugar, vinegar, or spices to taste—different ketchups vary in sweetness.
- Simmer uncovered to allow the sauce to thicken properly.
- Buttered, toasted buns are essential to prevent sogginess and add great flavor.
- Let the mixture rest off heat for 5 minutes before serving for better flavor melding.
- Store leftovers in the refrigerator up to 4 days or freeze up to 3 months.
- Great make-ahead recipe; flavors improve after refrigerating overnight.
