Equipment

Ingredients
  

For the Vindaloo Paste

  • 8 dried Kashmiri red chilies - 10 for spicier; reduce to 5–6 for milder, stalks removed
  • 6 cloves garlic
  • 1 inch piece fresh ginger - 2.5 cm, peeled
  • 1 tsp cumin seeds - 3g
  • 1 tsp coriander seeds - 3g
  • 6 whole cloves
  • 0.5 tsp black peppercorns - 1.5g
  • 1 small cinnamon stick - about 1 inch or 2.5 cm
  • 0.5 tsp mustard seeds - 1.5g
  • 0.25 tsp turmeric powder - 0.7g
  • 3 tbsp white wine vinegar or apple cider vinegar - 45 ml
  • 1 tbsp water - 15 ml, to help blend

For the Chicken Curry

  • 2 lbs bone-in, skinless chicken pieces - 900g, thighs and drumsticks work best
  • 3 tbsp neutral oil - 45 ml, vegetable or canola
  • 2 medium onions - finely chopped
  • 1 tsp salt - 5g, plus more to taste
  • 0.5 tsp turmeric powder - 1.5g
  • 1 tsp sugar - 5g, balances the vinegar's acidity
  • 0.5 cup water or chicken broth - 120 ml
  • fresh cilantro - for garnish

Instructions
 

  • Soak the dried chilies in warm water for 15-20 minutes until softened, then drain well.
  • Dry-roast cumin seeds, coriander seeds, peppercorns, cloves, cinnamon, and mustard seeds in a skillet over medium heat for 2-3 minutes until fragrant. Cool completely.
  • Blend the toasted spices with soaked chilies, garlic, ginger, turmeric, and vinegar until smooth, adding a tablespoon of water if needed to form a thick paste.
  • Coat chicken pieces thoroughly with two-thirds of the vindaloo paste and marinate for at least 30 minutes, or up to overnight for deeper flavor.
  • Heat oil in a Dutch oven over medium heat. Cook chopped onions with salt for 15-18 minutes until deeply golden brown and caramelized.
  • Stir in the reserved vindaloo paste and cook for 3-5 minutes until the oil separates from the masala, then add the marinated chicken and brown for 5-6 minutes.
  • Add water or broth and sugar, scraping up any browned bits from the pan. Cover and simmer for 25-30 minutes until chicken is tender. Uncover for the final 5-7 minutes to thicken the sauce.
  • Adjust seasoning with salt or extra vinegar if desired. Garnish with fresh cilantro and serve hot with rice or naan.

Notes

  • Bone-in chicken is best: Bones add collagen to the sauce for a richer gravy. Boneless chicken works but produces a thinner sauce.
  • Don't rush the onions: Properly caramelized golden-brown onions are essential for a rich, flavorful gravy.
  • Soak the chilies: Soaking softened dried chilies blend into a smoother paste without fibrous pieces.
  • Use a non-reactive pan: Vinegar reacts with aluminum and cast iron, producing off flavors. Use enameled cast iron, stainless steel, or non-stick.
  • Heat control: Use 5-6 chilies with seeds removed for moderate heat. Add more or keep seeds for a fiery version.
  • Make it ahead: This curry tastes even better the next day as the flavors develop. Refrigerate overnight and reheat gently.
  • Storage: Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
  • Variations: Substitute chicken with bone-in pork shoulder (cook 45-60 min), lamb (cook 45-60 min), or potatoes and cauliflower for a vegetarian version.
  • Serving suggestion: Serve with basmati rice, jeera rice, garlic naan, and cucumber raita to balance the heat.
