- 6 bone-in, skin-on chicken thighs - about 3 lbs or 1.4 kg
- 1.5 lbs baby potatoes - 680g, halved
- 2 medium carrots - about 200g, cut into 1-inch pieces
- 1 large red bell pepper - cut into 1-inch chunks
- 1 large yellow bell pepper - cut into 1-inch chunks
- 1 medium red onion - cut into wedges
- 4 cloves garlic - minced
- 3 tbsp extra-virgin olive oil - 45ml, divided (2 tbsp for vegetables, 1 tbsp for chicken)
- 1.5 tsp garlic powder - 7g
- 1.5 tsp smoked paprika - 7g
- 1 tsp dried Italian seasoning - 5g
- 1 tsp onion powder - 5g
- 1 tsp salt - 5g, plus more to taste
- 0.5 tsp black pepper - 2.5g
- 0.5 tsp red pepper flakes - 2.5g, optional for heat

Preheat oven to 425°F (220°C) with rack in center. Line a large rimmed sheet pan with parchment paper or foil.
In a small bowl, combine garlic powder, smoked paprika, Italian seasoning, onion powder, salt, black pepper, and red pepper flakes (if using).
In a large bowl, toss halved potatoes, carrots, bell peppers, and onion with minced garlic, 2 tbsp olive oil, and half the seasoning blend until evenly coated. Spread in a single layer on the sheet pan.
Pat chicken thighs completely dry with paper towels. Drizzle with remaining 1 tbsp olive oil and rub all over. Sprinkle remaining seasoning blend generously over all sides, pressing into the skin.
Nestle seasoned chicken thighs skin-side up on top of the vegetables, spacing evenly and ensuring they do not overlap.
Roast for 40 to 45 minutes without opening the oven during the first 35 minutes. Chicken is done when skin is golden and internal temperature reaches 165°F (74°C) in the thickest part.
For extra crispy skin, broil for 2 to 3 minutes, watching carefully to prevent burning.
Let chicken rest on the pan for 5 minutes. Scatter with fresh parsley, taste vegetables and adjust salt, then serve directly from the pan.
