  • 1/4 cup green onions or chives - about 25 g, finely chopped
  • 1/4 cup dried cranberries - about 30 g, optional

For the Dressing

  • 3/4 cup mayonnaise - about 180 ml
  • 1/4 cup Greek yogurt or sour cream - about 60 ml
  • 2 tablespoons fresh lemon juice - about 30 ml
  • 1 tablespoon Dijon mustard - about 15 ml
  • 1 teaspoon honey - about 5 ml
  • 1/2 teaspoon salt - or to taste
  • 1/4 teaspoon black pepper - or to taste
  • 2 tablespoons fresh herbs - parsley, tarragon, or dill, chopped, optional

Instructions
 

  • Prepare the chicken by removing meat from rotisserie chicken or using leftover cooked chicken, cutting into bite-sized 1/2-inch cubes or shredding. Ensure chicken is completely cooled before mixing.
  • Wash and dry red grapes, then halve them lengthwise. Dice celery into small 1/4-inch pieces and finely chop green onions. Set aside.
  • Toast the nuts in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and slightly darker. Immediately transfer to a plate and cool completely.
  • In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, honey, salt, pepper, and fresh herbs until smooth. Taste and adjust seasoning.
  • In a large mixing bowl, combine the diced chicken, halved grapes, diced celery, toasted nuts, green onions, and dried cranberries if using. Toss gently to distribute.
  • Pour the dressing over the chicken mixture and fold together gently with a rubber spatula until everything is evenly coated. Be careful not to overmix.
  • Cover and refrigerate for at least 30 minutes, or up to 2-3 hours, to allow flavors to meld. Stir before serving and adjust seasoning if needed.
