- 1/4 cup green onions or chives - about 25 g, finely chopped
- 1/4 cup dried cranberries - about 30 g, optional
For the Dressing
- 3/4 cup mayonnaise - about 180 ml
- 1/4 cup Greek yogurt or sour cream - about 60 ml
- 2 tablespoons fresh lemon juice - about 30 ml
- 1 tablespoon Dijon mustard - about 15 ml
- 1 teaspoon honey - about 5 ml
- 1/2 teaspoon salt - or to taste
- 1/4 teaspoon black pepper - or to taste
- 2 tablespoons fresh herbs - parsley, tarragon, or dill, chopped, optional
Prepare the chicken by removing meat from rotisserie chicken or using leftover cooked chicken, cutting into bite-sized 1/2-inch cubes or shredding. Ensure chicken is completely cooled before mixing.
Wash and dry red grapes, then halve them lengthwise. Dice celery into small 1/4-inch pieces and finely chop green onions. Set aside.
Toast the nuts in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and slightly darker. Immediately transfer to a plate and cool completely.
In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, honey, salt, pepper, and fresh herbs until smooth. Taste and adjust seasoning.
In a large mixing bowl, combine the diced chicken, halved grapes, diced celery, toasted nuts, green onions, and dried cranberries if using. Toss gently to distribute.
Pour the dressing over the chicken mixture and fold together gently with a rubber spatula until everything is evenly coated. Be careful not to overmix.
Cover and refrigerate for at least 30 minutes, or up to 2-3 hours, to allow flavors to meld. Stir before serving and adjust seasoning if needed.
- Make ahead: This chicken salad tastes even better after sitting in the refrigerator for a few hours. You can prepare it up to 24 hours in advance for the best flavor.
- Chicken options: Rotisserie chicken works wonderfully for convenience, but leftover roasted, grilled, or poached chicken also works perfectly. Just ensure it's completely cooled before mixing.
- Nuts: Toasting nuts is optional but highly recommended. It brings out their natural oils and adds incredible depth of flavor. Watch carefully as nuts can burn quickly.
- Lighten it up: Replace half or all of the mayonnaise with Greek yogurt for extra protein and fewer calories. Use low-fat mayonnaise for a lighter option.
- Storage: Store in an airtight container in the refrigerator for up to 3-4 days. Never leave chicken salad at room temperature for more than 2 hours.
- Freezing: Not recommended as mayonnaise-based dressings separate and become watery when thawed, and grapes become mushy.
- Nut crunch hack: If making ahead, add toasted nuts just before serving to maintain their crunchy texture. The nuts will soften in the refrigerator.
- Variations: Try adding diced apples for a Waldorf twist, curry powder for curried chicken salad, or bacon for smoky richness.
- Use red grapes: Red grapes tend to be sweeter and add beautiful color contrast. Green grapes also work well if that's what you have on hand.
- Reviving leftovers: If the salad seems dry after a day or two, stir in a tablespoon of mayonnaise or Greek yogurt to refresh the creaminess.
