For the Bruschetta Topping
- 4 medium roma tomatoes - about 1 lb or 450g, seeded and finely diced
- 3 cloves garlic - finely minced
- 2 tablespoons extra virgin olive oil - 30ml
- 1 tablespoon balsamic vinegar - 15ml
- ¼ cup fresh basil leaves - 10g, thinly sliced or chiffonade
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper

Make the bruschetta topping first: seed and dice the tomatoes, then combine with minced garlic, olive oil, balsamic vinegar, basil, salt, and pepper in a medium bowl. Set aside at room temperature to allow flavors to meld.
Pound the chicken breasts to an even ½-inch (1.25cm) thickness between plastic wrap or in a resealable bag using a meat mallet or rolling pin.
Mix Italian seasoning, garlic powder, ½ teaspoon salt, and ¼ teaspoon pepper in a small bowl. Drizzle chicken with 1 tablespoon olive oil and coat evenly with the seasoning mixture.
Heat a large cast-iron skillet over medium-high heat until hot. Add 2 tablespoons olive oil and 1 tablespoon balsamic vinegar, then place chicken in a single layer. Cook for 5–6 minutes until golden brown on the underside, then flip and cook 4–5 minutes more.
Check that the internal temperature reaches 165°F (74°C) with an instant-read thermometer. Reduce heat to low, place a slice of mozzarella on each breast, cover, and cook for 1–2 minutes until the cheese melts.
Stir the bruschetta topping and spoon generous portions over each chicken breast. Drizzle with balsamic glaze, garnish with fresh basil, and serve immediately.
- Seed your tomatoes: Removing the seeds and gel is the most important step for preventing a watery topping.
- Let the bruschetta rest: Allowing the topping to sit for 10–15 minutes at room temperature helps the garlic and basil infuse the oil and vinegar for a more balanced flavor.
- Use fresh basil: Dried basil will not provide the same bright, aromatic quality that makes this dish taste genuinely Italian.
- Pound to even thickness: This is crucial for even cooking and prevents dry edges while the center finishes cooking.

- Make ahead: The bruschetta topping can be prepared up to 24 hours in advance. Drain any excess liquid before serving and add fresh basil to brighten it.
- Storage: Store leftover chicken and bruschetta separately in airtight containers in the refrigerator for 3–4 days. The topping does not reheat well.
- Reheating: Reheat the chicken in a 350°F (175°C) oven, covered with foil, for 10–12 minutes. Make fresh topping for serving.
