Ingredients
  

  • 2 lbs boneless, skinless chicken breasts - 900g, about 3-4 medium breasts
  • 1 lb baby potatoes - 450g, halved
  • 2 cups broccoli florets - 180g
  • 1 large red bell pepper - cut into 1-inch pieces
  • 1 medium red onion - cut into wedges
  • 4 tablespoons olive oil - 60ml, divided
  • teaspoons smoked paprika
  • teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher salt - divided, plus more to taste
  • ½ teaspoon black pepper - divided
  • 3 cloves garlic - minced
  • ½ lemon - juiced (about 1½ tablespoons or 22ml)
  • fresh parsley - for garnish (optional)

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large rimmed sheet pan with parchment paper or foil. For extra-crispy potatoes, place the pan in the oven to preheat as well.
  • In a small bowl, combine smoked paprika, garlic powder, Italian seasoning, onion powder, dried oregano, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir until evenly blended.
  • Halve baby potatoes (quarter large ones). In a large bowl, toss with 1½ tablespoons olive oil, half the seasoning blend, minced garlic, and ¼ teaspoon salt. Spread cut-side down on the hot pan and roast alone for 10-15 minutes.
  • Pat chicken breasts completely dry with paper towels. If thicker than 1 inch, pound to even thickness. Place in the large bowl with 1½ tablespoons olive oil, remaining seasoning blend, and lemon juice. Toss to coat thoroughly.
  • In the same bowl, toss broccoli, bell pepper, and onion with remaining 1 tablespoon olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper until evenly coated.
  • Remove pan from oven. Place seasoned chicken breasts in the center, spacing them apart. Arrange potatoes in one section and scatter vegetables in the remaining space in a single layer.
  • Roast on the center rack for 20-25 minutes. Begin checking at 20 minutes — chicken is done when an instant-read thermometer reads 165°F (74°C) in the thickest part.
  • For extra-crispy edges, switch to high broil for the final 3-4 minutes. Watch carefully to prevent burning.
  • Remove from oven and let chicken rest for 5 minutes before slicing against the grain. Garnish with fresh parsley and serve directly from the pan.

Notes

  • Pat chicken completely dry: Moisture prevents browning. Always dry with paper towels before seasoning.
  • Don't overcrowd: Use two pans if needed. Proper spacing creates caramelized, crispy edges instead of steaming.
  • Pound to even thickness: Prevents the thinner end from drying out before the thick end is done.
  • Potatoes need a head start: They take longer to cook than chicken. Roasting them for 10-15 minutes first ensures everything finishes at the same time.
  • Use a meat thermometer: Color isn't a reliable indicator. 165°F (74°C) is the only certain measure of doneness.
  • Always rest the chicken: Five minutes of resting allows juices to redistribute, keeping the meat moist.
  • Vegetable swaps: Dense vegetables like carrots or parsnips need a head start with the potatoes. Tender vegetables like zucchini or asparagus can be added in the last 10-12 minutes.
  • Storage: Refrigerate leftovers in an airtight container for up to 4 days. Freeze cooked chicken separately from vegetables for up to 3 months.
  • Reheating: Oven reheating at 375°F for 10-12 minutes restores the best texture. Microwave with a damp paper towel over the chicken to retain moisture.
