Chicken Biryani

This layered, slow-cooked Hyderabadi-style biryani fills your kitchen with the irresistible scent of whole spices, saffron-soaked rice, and golden caramelized onions. Each bite gives you something slightly different — a piece of tender spiced chicken here, a saffron-perfumed grain of rice there.

  • Heavy-bottomed pot or Dutch oven - At least 5-quart / 4.7L capacity, with a tight-fitting lid
  • Large wide pan or kadai - For frying onions
  • Large pot - For par-boiling the rice

Ingredients
  

  • 2 lbs bone-in skinless chicken - 900g, legs and thighs work best
  • 1 cup full-fat plain yogurt - 240ml
  • 2 tablespoons biryani masala
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons fried onions - from the batch below
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons neutral oil

For the Fried Onions (Birista)

  • 3 large yellow onions - thinly sliced
  • 2 cups oil - 480ml, for deep frying

For the Rice

  • 2 cups aged basmati rice - 400g
  • 1 bay leaf
  • 4 green cardamom pods - lightly crushed
  • 2 black cardamom pods
  • 4 whole cloves
  • 1 inch cinnamon stick
  • 1 teaspoon cumin seeds
  • 1 tablespoon salt
  • 8 cups water - 2-2.5 liters, for boiling

For the Saffron Milk

  • saffron threads - generous pinch (about 20-25 threads)
  • 4 tablespoons whole milk - warm, 130°F / 55°C

For the Layering

  • 3 tablespoons ghee - divided
  • fried onions - remaining from above
  • fresh mint leaves - small handful
  • fresh cilantro - small handful, roughly chopped
  • 1 tablespoon rose water - optional, but traditional
  • 2 tablespoons warm water - for the dum steam

Instructions
 

  • Fry the onions in hot oil (350°F / 175°C) in batches for 15-20 minutes until deep golden brown and crispy. Drain on paper towels and reserve ⅓ for the marinade, keeping the rest for layering.
  • Combine yogurt, biryani masala, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, lemon juice, 2 tbsp oil, and ⅓ of the fried onions in a large bowl. Mix thoroughly.
  • Add chicken pieces to the marinade and coat well, ensuring every piece is covered. Cover and refrigerate for a minimum of 2 hours, preferably overnight.
  • Rinse basmati rice 3-4 times until water runs clear, then soak in cold water for 30 minutes. Drain completely through a fine mesh strainer.
  • Steep saffron threads in 4 tablespoons of warm whole milk for at least 15 minutes until the milk turns deep golden-orange.
  • Bring 8-10 cups of water to a rolling boil with 1 tablespoon salt. Add whole spices, then gently add drained rice. Cook for exactly 5-6 minutes until 70% done (white center visible in each grain). Drain immediately and spread on a tray.
  • Heat 1 tablespoon ghee in a heavy-bottomed pot. Add marinated chicken in a single layer and cook undisturbed for 4-5 minutes. Stir and cook for 3-4 minutes more.
  • Reduce heat to medium-low, cover, and cook chicken for 10-12 minutes until 80% done and marinade has thickened into a glossy sauce. Spread chicken evenly across the bottom of the pot.
  • Drizzle 1 tablespoon ghee over the chicken. Spread half the par-cooked rice evenly over the chicken. Scatter half the remaining fried onions, mint, and cilantro over the rice. Drizzle half the saffron milk in streaks.
  • Add the remaining rice as the final layer. Top with remaining fried onions, mint, cilantro, and saffron milk. Add rose water (if using), remaining 1 tablespoon ghee, and 2 tablespoons warm water around the edges of the pot.
  • Cover the pot with foil, pressing tightly against the rim, then place the lid firmly on top. Cook over high heat for 3-4 minutes until steam builds, then reduce to the lowest heat and cook for 20-25 minutes.
  • Turn off the heat and let the biryani rest, still sealed, for an additional 10 minutes. Carefully remove the foil and lid, then gently mix the layers from the sides down. Serve hot.

Notes

  • Marinating time: Don't skip the marinating time. A minimum of 2 hours is required, but overnight marination gives you noticeably more tender and flavorful chicken.
  • Par-cooked rice: Your par-cooked rice must be underdone. If the rice is fully cooked before the dum stage, it will turn mushy. Aim for 70% done with a small white dot still visible in the center.
  • Watch your fried onions: They go from golden to burnt in less than a minute. Start checking them around the 12-minute mark. Remove them immediately the moment they turn deep golden.
  • Seal the pot properly: The foil-and-lid method is what creates true dum. A loose lid means escaping steam, which means uneven cooking and dry rice.
  • Lowest possible heat: Use the lowest possible heat during the dum stage. The goal is a gentle, sustained steam, not active bubbling. A tawa under the pot is a huge help if your stove runs hot.
  • Let it rest: Those final 10 minutes off the heat are not optional. Opening the pot too early disrupts the steam and affects the texture of the top layers.
  • Make ahead: You can prepare the marinade and fry the onions up to 2 days in advance, which breaks up the work across two days if needed.
  • Storage: Biryani stores beautifully for up to 3-4 days in the refrigerator and freezes well for up to 2 months. Reheat with a splash of water and steam for best results.
  • Boneless variation: If using boneless chicken thighs, reduce the initial cooking time in Step 7 by about 5 minutes to prevent drying out during the dum stage.
