Ingredients
  

  • 4 large flour tortillas - 10-inch / 25 cm, burrito-size
  • 2 cups Monterey Jack cheese - 225g, shredded, or a blend of Monterey Jack and sharp cheddar
  • 2 tablespoons unsalted butter - 28g, divided
  • 0.5 teaspoon garlic powder - optional, but adds great depth
  • 0.25 teaspoon onion powder - optional
  • salt - pinch, to taste

Instructions
 

  • Grate the cheese using a box grater with medium holes. If using a blend, combine the cheeses in a bowl. Add garlic powder and onion powder if desired and toss to distribute evenly.
  • Place a large nonstick or cast iron skillet over medium heat and preheat for 1-2 minutes. Add 1 tablespoon of butter and let it melt completely, swirling to coat the pan evenly.
  • Lay one tortilla flat in the buttered skillet. Sprinkle 1 cup of the shredded cheese evenly across the entire tortilla, staying about 1/2 inch from the edge. Immediately place a second tortilla on top and press down gently.
  • Cook the first side undisturbed for 2 to 3 minutes until the bottom is a deep golden-brown color. Peek underneath to check the color and ensure it's developing evenly.
  • Once the first side is golden, slide your spatula fully under the quesadilla and flip it over in one confident motion. Add the remaining tablespoon of butter to the pan if needed. Cook the second side for another 2 to 3 minutes until it is equally golden brown and the cheese is completely melted.
  • Transfer the finished quesadilla to a cutting board and let it rest for 60 to 90 seconds. Use a pizza cutter or sharp knife to slice it into 6 or 4 triangular wedges.
  • Serve the wedges immediately while hot and the cheese is gooey, alongside your choice of sour cream, salsa, guacamole, pickled jalapeños, or hot sauce.

Notes

  • Shred your own cheese: Pre-shredded bags contain anti-caking starch that prevents smooth melting. Shredding from a block gives you superior melt and stretch.
  • Use medium heat: High heat will burn the exterior before the cheese melts. Medium heat is the sweet spot for developing a golden crust while the inside heats through completely.
  • Don't skip the butter: Butter adds both flavor and a crispier crust than cooking oil. For a dairy-free option, use vegan butter rather than oil.
  • Let the quesadilla rest before cutting: Even 60 seconds of resting allows the cheese to set slightly so it doesn't flood out when sliced.
  • Don't overfill: Too much cheese or too many fillings can make the quesadilla hard to flip cleanly and cause it to burst at the seams.
  • Preheat the pan properly: A properly heated pan is what gives you that immediate crispy sizzle when the tortilla hits the surface.
  • Keep them crispy: Place cooked quesadillas on a wire rack set over a baking sheet rather than stacking them directly on a plate to prevent trapped steam from softening the crust.
  • Cheese alternatives: For a more authentic Mexican flavor, use Oaxaca cheese (quesillo) which melts into long, luscious strings with a mild, creamy flavor.
  • Storage: Store cooled leftovers in an airtight container for up to 3 days in the refrigerator. Reheat in a skillet or oven to restore crispiness.
