- 4 thighs bone-in, skin-on chicken thighs - about 2 lbs or 900g total
- 2 tablespoons dry ranch dressing mix - such as Hidden Valley Ranch
- 1 tablespoon vegetable oil - or avocado oil
- salt - to taste
- 1 pinch fresh cracked black pepper - or more to taste
- fresh parsley or chives - for garnish, optional
Remove chicken from refrigerator 15 minutes before cooking. Pat both sides of each thigh completely dry with paper towels.
Place dried thighs on a plate. Lightly season both sides with salt and a generous pinch of black pepper. Rub 1 tablespoon of ranch mix firmly into the skin side and the remaining 1 tablespoon into the underside.
Preheat cast iron skillet over medium heat for 2 to 3 minutes until thoroughly hot. Add oil and tilt to coat the bottom evenly.
Carefully place chicken thighs skin-side down in the hot oil, arranging them without touching. Press gently with tongs to ensure full contact. Do not move them.
Cook undisturbed over medium heat for 12 to 15 minutes until skin is deeply golden-brown to blackened and releases naturally from the pan.
Flip chicken to flesh side and cook for an additional 10 to 12 minutes until internal temperature reaches 165°F (74°C) in the thickest part away from the bone.
Transfer to a plate or wire rack and rest for 5 minutes before serving. Garnish with fresh parsley or chives if desired.
- Dry the chicken thoroughly: This is the single most important step for achieving a crispy crust. Any surface moisture will create steam and prevent browning.
- Don't rush the preheat: A cold pan leads to sticking and uneven cooking. Give your cast iron a full 2 to 3 minutes to heat before adding oil.
- Use medium heat: The ranch seasoning can burn if the pan is too hot. Medium heat allows the skin to render fat and crisp gradually without scorching.
- Never move the chicken while it sears: The chicken will release naturally from the pan when properly crisped. If it sticks, it needs more time.
- Season lighter with salt: Ranch mix already contains salt, so a light sprinkle is all you need to avoid over-salting.
- Rest the chicken before cutting: Five minutes of resting allows juices to redistribute, keeping every bite moist and flavorful.
- Spicy variation: Add 1/2 teaspoon cayenne pepper and 1 teaspoon smoked paprika to the ranch mix for extra heat and smoky depth.
- Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 375°F (190°C) for 12 to 15 minutes to keep skin crispy.
- Freezer-friendly: Wrap individual thighs tightly in plastic wrap and place in a freezer bag for up to 3 months. Thaw overnight before reheating.
- Best served with: Garlic mashed potatoes, cilantro lime rice, green beans, or a simple green salad with ranch dressing.
