- 4 Large Flour Tortillas - 10-inch / 25 cm
- 1 can Black Beans - 15 oz / 425 g, drained and rinsed
- 2 cups Shredded Mexican Cheese Blend - 200g, or Monterey Jack and cheddar
- 0.5 cup Red Onion - 75g, finely diced
- 0.5 cup Bell Pepper - 75g, any color, finely diced
- 1 teaspoon Cumin
- 0.5 teaspoon Garlic Powder
- 0.5 teaspoon Chili Powder
- Salt and Black Pepper - to taste
- 1 tablespoon Olive Oil or Neutral Cooking Oil - 15 ml
- 2 tablespoons Butter - for the pan, 28g total

Drain and rinse black beans, pat dry. Finely dice red onion and bell pepper. Grate cheese if using a block. Combine cumin, garlic powder, chili powder, salt, and pepper in a small bowl.
Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cook for 3-4 minutes until softened. Add black beans and spice mixture, cook for 2 more minutes, pressing some beans to create a creamy texture. Remove from heat.
Sprinkle 1/4 cup cheese over one half of a tortilla. Top with 1/4 of the bean filling, then another 1/4 cup cheese. Fold the empty half over to create a half-moon shape. Repeat with remaining tortillas.
Wipe the skillet clean. Melt 1/2 tablespoon butter over medium heat. Cook one quesadilla for 2-3 minutes per side until golden and crispy. Transfer to a paper towel-lined plate. Repeat with remaining quesadillas, adding butter between each.
Let quesadillas rest for 1 minute before slicing. Cut each into 3 wedges and serve immediately with sour cream, guacamole, salsa, or lime wedges.
