Preheat oven to 375°F (190°C). Lightly spray an 8x8-inch baking dish with non-stick cooking spray.
Drain canned peaches in a colander for 3-5 minutes. In a medium bowl, combine drained peaches with sugar, cinnamon, lemon juice, and vanilla. Stir gently to coat.
