Ingredients
  

  • 4 boneless, skinless chicken breasts - about 6 oz or 170g each
  • 1 packet taco seasoning - 1 oz or 28g, or 2 tablespoons homemade
  • 1.5 cups chunky salsa - 360ml, mild, medium, or hot
  • 1 cup shredded Mexican cheese blend - 100g, or cheddar, Monterey Jack, or pepper jack
  • 2 tablespoons olive oil - 30ml
  • 1 tablespoon fresh lime juice - 15ml, plus extra for serving
  • 2 tablespoons fresh cilantro - chopped, for garnish
  • salt - to taste
  • black pepper - to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and spread 1/2 cup of salsa evenly across the bottom.
  • Place chicken breasts in a zip-lock bag and pound to 3/4-inch thickness using a meat mallet. Pat dry with paper towels.
  • Combine taco seasoning with salt and pepper. Drizzle chicken with olive oil, then rub seasoning mixture generously over both sides. Squeeze lime juice over the seasoned chicken.
  • Place seasoned chicken breasts on top of the salsa layer, leaving space between each piece. Spoon remaining salsa evenly over each breast, pressing gently with a spoon to coat.
  • Bake uncovered on the center rack for 25-35 minutes. Chicken is done when internal temperature reaches 165°F (74°C) in the thickest part.
  • Remove from oven and sprinkle shredded cheese evenly over each breast. Return to oven and bake 5 more minutes until cheese is melted and golden.
  • Rest for 5 minutes before serving. Sprinkle with fresh cilantro and serve directly from the dish, spooning extra salsa sauce from the bottom over the top.

Notes

  • Chunky salsa is key: Use a thick, chunky salsa rather than thin or watery varieties. Thin salsa will make the dish soupy instead of saucy.
  • Don't skip pounding: Pounding chicken to even thickness ensures it cooks evenly and stays juicy. Skipping this step is the most common cause of dry chicken.
  • Use a thermometer: Always check the internal temperature. Pulling chicken at exactly 165°F (74°C) guarantees moist results every time.
  • Variation - Salsa Verde: Swap red salsa for salsa verde and use Monterey Jack cheese for a tangy green chile twist.
  • Variation - Creamy: Place 2 tablespoons of softened cream cheese on each breast before adding salsa for a rich, creamy sauce.
