- 2 lbs fresh asparagus - 900g, woody ends trimmed and cut into 2-inch pieces; reserve 12–15 tips for garnish
- 2 cups cauliflower florets - 200g, roughly chopped
- 1 medium yellow onion - about 1 cup or 150g, diced
- 3 cloves garlic - minced
- 4 cups vegetable broth - 960ml; chicken broth can be substituted (not vegan)
- 2 tbsp olive oil - 30ml, plus 1 extra tbsp for sautéing garnish tips
- 1 tsp sea salt - plus more to taste
- 1/2 tsp black pepper - freshly ground
- 1 bay leaf
- 1 tsp dried dill - or 1 tablespoon fresh dill
- 1 tbsp fresh lemon juice - optional, for brightness; add after blending
Rinse and dry asparagus spears, then snap or cut off the woody ends and discard them. Cut the tender stalks into 2-inch pieces and set aside 12–15 pretty tips in a small bowl for garnish.
Heat 2 tablespoons olive oil in a large Dutch oven over medium heat. Add the diced onion with ½ tsp salt and cook, stirring occasionally, for 7–8 minutes until translucent. Add the minced garlic and stir for 30–60 seconds until fragrant.
Add the asparagus pieces (not the reserved tips) and sauté for 5–6 minutes until just softened and bright green. Stir in the cauliflower, vegetable broth, bay leaf, dill, remaining ½ tsp salt, and black pepper.
Bring the soup to a boil over high heat, then reduce to a gentle simmer. Cover with the lid slightly ajar and cook for 25–30 minutes, until the asparagus and cauliflower are very tender and easily pierced with a fork.
While the soup simmers, heat 1 tablespoon olive oil in a small skillet over medium-high heat. Sauté the reserved asparagus tips for 3–4 minutes until tender-crisp and lightly golden. Season with a pinch of salt and set aside.
Remove and discard the bay leaf, then let the soup cool 5 minutes. Use an immersion blender to blend directly in the pot for 2–3 minutes until silky smooth, or blend in batches in a standard blender with the lid vent open and covered with a towel.
Taste and adjust salt and pepper as needed, then stir in the lemon juice if using. Reheat over low heat if needed, ladle into bowls, and top each serving with 2–3 sautéed asparagus tips.
- Choose asparagus carefully: look for firm, straight spears with tightly closed tips and bright green color — avoid limp or mushy ones.
