Drain the canned salmon in a fine-mesh strainer, pressing gently to remove excess liquid. Transfer to a mixing bowl, remove any large bones or skin, and flake thoroughly with a fork.
Add the beaten egg, mayonnaise, lemon juice, and Dijon mustard to the salmon. Stir gently to combine, then add panko, dill, garlic powder, onion powder, salt, pepper, and parsley. Mix until just combined.
Cover the bowl and refrigerate the mixture for at least 10 to 15 minutes to firm it up, making the patties easier to shape.
Use a 1/3-cup measuring cup or cookie scoop to portion the mixture into 6 equal amounts. Form each portion into a disc about 1 inch thick.
Preheat the air fryer to 390°F (200°C) for 3 to 5 minutes. Lightly spray the basket with olive oil cooking spray.
Place patties in a single layer in the basket, leaving space between them. Lightly spray tops with oil. Air fry at 390°F (200°C) for 8 to 10 minutes, flipping halfway through and spraying again after flipping, until golden brown and internal temperature reaches 160°F (71°C).
Transfer patties to a plate and let rest for 2 to 3 minutes before serving. Serve warm with lemon wedges, tartar sauce, or remoulade.
