Ingredients
  

  • 2 cups cold leftover mashed potatoes - 450g, firm enough to scoop and shape
  • 1 cup shredded cheddar cheese - 100g, sharp cheddar gives the best flavor
  • 2 tablespoons chopped green onions - or chives, for color and mild onion flavor
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt - Adjust based on how seasoned your mash already is
  • 1/4 teaspoon black pepper
  • 1/3 cup all-purpose flour - 40g, for the first dredge
  • 1 large egg - lightly beaten with 1 tablespoon milk, for the egg wash
  • 1 tablespoon milk - for the egg wash
  • 1 cup panko breadcrumbs - 50g, panko gives a much crispier coating than regular breadcrumbs
  • Cooking spray - to coat the balls and the air fryer basket

For the Dipping Sauce

  • Ranch dressing - for serving
  • Sour cream - for serving
  • Marinara sauce - for serving

Instructions
 

  • Combine the cold mashed potatoes, cheddar, green onions, garlic powder, onion powder, salt, and pepper in a large bowl. Mix thoroughly and adjust seasoning to taste. Refrigerate for 15-20 minutes if the mixture is too soft.
  • Portion the mixture using a cookie scoop (about 1.5 tablespoons each). Roll into smooth balls with lightly floured or oiled hands, then place on a parchment-lined tray. Chill for at least 15-20 minutes to firm up.
  • Set up a breading station with flour, egg wash (egg beaten with milk), and panko breadcrumbs in separate shallow bowls.
  • Coat each chilled ball in flour, then dip in the egg wash, and finally roll in panko, pressing gently to adhere. For extra crunch, repeat the egg wash and panko steps.
  • Preheat the air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the basket with cooking spray to prevent sticking.
  • Arrange the breaded balls in a single layer in the basket, leaving space between each. Spray the tops with cooking spray. Air fry at 375°F (190°C) for 10-12 minutes, shaking or turning halfway through. Spray again after turning for even browning.
  • Remove the golden, crispy balls from the air fryer and let them rest for 2-3 minutes before serving. Garnish with extra green onions and serve with your favorite dipping sauces.

Notes

  • Start with cold, firm leftover mashed potatoes. Warm or freshly made mash will be too soft and sticky to hold its shape. Refrigerate freshly made mash for at least 2 hours or overnight.
  • Don't skip the chilling step after shaping. Refrigerating the shaped balls for 15-20 minutes before breading helps them firm up and makes the breading process less messy.
  • Use panko breadcrumbs for the crispiest coating. Regular breadcrumbs will produce a denser, less crunchy exterior.
  • For an extra-crispy coating, double-coat the balls by dipping them back in the egg wash and panko a second time.
  • Spray the breaded balls generously with cooking spray before air frying. This is essential for achieving that golden, fried-looking finish.
  • Do not overcrowd the air fryer basket. Cook in batches if necessary to ensure hot air circulates around each ball. Overcrowding will steam the balls rather than crisp them.
  • Leftover cooked mashed potato balls can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer at 375°F (190°C) for 3-5 minutes to restore crispiness.
  • To freeze, place uncooked, breaded balls on a parchment-lined tray until solid, then transfer to a freezer bag. Cook from frozen, adding 3-5 extra minutes to the cooking time. Avoid freezing cooked balls as the texture can become watery.
  • Customize your potato balls with mix-ins like cooked bacon, jalapeños, or different cheeses such as mozzarella, pepper jack, or Parmesan.
