Heat oil in a large skillet over medium-high heat. Add ground pork and cook for 4-5 minutes until browned and cooked through. Drain excess grease.
Add white parts of green onions, garlic, and ginger to the skillet. Cook for 1 minute until fragrant, stirring constantly.
Add coleslaw mix, soy sauce, sesame oil, salt, and pepper. Cook for 2-3 minutes until cabbage is wilted but still has texture. Stir in green onion tops off heat.
Spread filling on a plate and cool for 10-15 minutes until comfortable to handle.
Place one wrapper in a diamond position. Add 3-4 tablespoons of filling toward the bottom corner. Fold bottom up, fold in sides, moisten top corner with water, and roll tightly to seal.
Preheat air fryer to 380°F (193°C) for 3-5 minutes. Spray basket with cooking spray. Generously spray or brush oil on each egg roll.
Arrange egg rolls in a single layer without touching. Air fry at 380°F for 7 minutes, flip, spray again, and cook for 3-5 more minutes until deep golden and crispy.
