- ½ cup cottage cheese - 115g, 2% or full-fat recommended
- ½ cup shredded cheddar cheese - 60g, or Swiss cheese, divided
- 4 strips bacon - cooked until crispy and crumbled, about ¼ cup or 30g
- 3 green onions - scallions, thinly sliced
- ¼ teaspoon fine salt
- ¼ teaspoon black pepper
- Non-stick cooking spray - for greasing the molds
Cook 4 strips of bacon in a skillet over medium heat for 3-4 minutes per side until crispy. Transfer to a paper towel-lined plate to cool, then crumble into small pieces.
Preheat your air fryer to 300°F (150°C) for 3-5 minutes. Lightly spray the inside of each silicone mold cup with non-stick cooking spray and place them in the air fryer basket.
Add 6 eggs, ½ cup cottage cheese, ¼ teaspoon salt, and ¼ teaspoon pepper to a blender. Blend on high for 20-30 seconds until completely smooth and no lumps remain.
Divide the crumbled bacon, sliced green onions, and about half the shredded cheese evenly between the molds. Gently press mix-ins into the bottom.
Slowly pour the blended egg mixture into each mold cup, filling each about ¾ full. Use a toothpick to gently swirl each cup. Sprinkle remaining cheese on top.
Cook at 300°F (150°C) for 12-15 minutes. Check at 10 minutes — they're done when centers no longer jiggle and a toothpick comes out clean.
Let egg bites cool in the mold for 5 minutes before removing. Gently press the bottom of each silicone cup to pop them out. Serve immediately or cool completely before storing.
