Ingredients
  

  • 4 bone-in, skin-on chicken thighs - about 2 lbs or 900g total
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt - or 3/4 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper - optional, for heat

  • fresh parsley - chopped, for serving

Instructions
 

  • Pat chicken thighs completely dry on all sides with paper towels.
  • Combine smoked paprika, garlic powder, onion powder, oregano, thyme, salt, pepper, and cayenne in a small bowl.
  • Drizzle olive oil over chicken and rub it all over, then sprinkle with spice rub and press to coat evenly.
  • Preheat air fryer to 400°F (200°C) for 3 to 5 minutes.
  • Arrange chicken thighs in a single layer in the basket, skin side up, making sure they are not touching.
  • Cook at 400°F (200°C) for 12 minutes, then flip and cook for 8 to 10 minutes more. Flip back to skin side up for the final 2 minutes.
  • Check internal temperature in the thickest part, avoiding the bone. Target 165°F (74°C) minimum, or 175-185°F (79-85°C) for more tender meat.
  • Let chicken rest for 5 minutes before serving. Squeeze lemon juice and garnish with parsley if desired.

Notes

  • Patting the chicken completely dry is the single most important step for achieving crispy skin.
  • For even crispier skin, place the patted-dry chicken uncovered in the refrigerator for 30 minutes to 1 hour before cooking.
  • Do not crowd the basket – arrange thighs in a single layer with space between each piece for proper air circulation.
  • An instant-read thermometer is essential for perfect results; don't guess at doneness.
  • Boneless, skinless thighs can be used – reduce cook time to 14-16 minutes total at 400°F, flipping once halfway.
  • For a lemon herb variation, replace smoked paprika with lemon zest, fresh thyme, and fresh rosemary.
  • Leftovers can be stored in the refrigerator for up to 4 days and reheated in the air fryer at 350°F for 4-5 minutes to restore crispiness.
  • Frozen chicken thighs can be cooked directly from frozen at 360°F for 20 minutes, then flip and cook 10-15 more minutes until internal temperature reaches 165°F.
  • The spice rub can be doubled and stored in an airtight jar for future use.
  • For extra flavor, gently lift the skin and rub some of the spice mixture directly onto the meat underneath.
