Equipment

  • Air fryer - Basket-style or oven-style both work
  • Instant-read meat thermometer - Non-negotiable for juicy chicken
  • Small mixing bowl
  • Pastry brush or spoon - For applying oil
  • Tongs - For flipping
  • Cutting board
  • Sharp chef's knife
  • Meat mallet or rolling pin - Optional, for pounding chicken to even thickness

Ingredients

  • 2 boneless, skinless chicken breasts - large, about 1.5 lbs or 680g total
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 teaspoon brown sugar
  • ½ teaspoon salt - or to taste
  • ¼ teaspoon black pepper
  • cooking spray - for the air fryer basket

Instructions

  • Remove chicken from refrigerator 10-15 minutes before cooking. Pat dry with paper towels, then pound to even ¾-inch thickness using a meat mallet if needed.
  • In a small bowl, combine paprika, garlic powder, onion powder, oregano, brown sugar, salt, and pepper. Stir until the spice mixture is uniform and any clumps are broken up.
  • Brush olive oil all over both chicken breasts, covering all sides and edges. Sprinkle the spice mixture generously over the oiled chicken, pressing firmly into the surface. Flip and repeat on the other side.
  • Preheat air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the basket with cooking spray to prevent sticking.
  • Place seasoned chicken breasts in the air fryer basket in a single layer, not touching. Air fry at 375°F (190°C) for 10 minutes.
  • Open the air fryer and use tongs to carefully flip the chicken breasts over. Continue cooking for another 5-8 minutes, depending on the size of the breasts.
  • Check internal temperature in the thickest part with an instant-read thermometer. Remove chicken when it reaches 160°F (71°C) for juiciest results, or 165°F (74°C) for safe consumption.
  • Transfer chicken to a plate, tent loosely with foil, and rest for 5 minutes. Slice against the grain and serve immediately.

Notes

  • Pat the chicken dry: Surface moisture is the enemy of a good crust. Dry thoroughly before applying oil and seasoning.
  • Don't skip the brown sugar: It caramelizes as the chicken cooks and creates a subtly flavored crust without making the chicken sweet.
  • Pound to even thickness: This ensures the whole breast cooks at the same rate, preventing overcooked thin edges.
  • Don't crowd the basket: Overlapping pieces block airflow and cause steaming instead of crisping. Cook in batches if needed.
  • Use an instant-read thermometer: Every air fryer runs slightly differently. Check internal temperature rather than relying solely on cook time.
  • Let it rest: Those 5 minutes of resting time allow juices to redistribute. Slicing too soon releases flavorful juices onto the cutting board.
  • Adjust for your air fryer model: If your chicken consistently overcooks or undercooks, adjust the temperature by 10-15 degrees accordingly.
  • Storage: Store cooked chicken in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
  • Reheating: For best results, reheat in the air fryer at 350°F (175°C) for 3-4 minutes. Add a tiny splash of water or broth to prevent drying.
  • Variation: Try swapping the spice blend for Cajun seasoning, lemon herb, or honey garlic for a different flavor profile.
