Ingredients
  

  • Beef chuck roast - 2–3 lbs (900g–1.4kg), brought to room temperature
  • 1 tablespoon Olive oil - 15ml
  • 1 tablespoon Worcestershire sauce - 15ml
  • 1 tablespoon Garlic powder - 8g
  • 1 tablespoon Onion powder - 8g
  • 1 teaspoon Smoked paprika - 3g
  • 1 teaspoon Dried thyme - 1g
  • 1 teaspoon Dried rosemary - 1g
  • 1 tablespoon Coarse black pepper - 6g, freshly cracked preferred
  • 1.5 teaspoon Kosher salt or sea salt - 9g

For the Gravy (Optional)

  • 1 cup Beef broth - 240ml, for gravy from drippings
  • 2 tablespoons All-purpose flour - 16g, for thickening gravy

Instructions
 

  • Remove the chuck roast from the refrigerator at least 30–60 minutes before cooking to allow it to come to room temperature. Pat the roast dry all over with paper towels.
  • In a small bowl, whisk together the olive oil and Worcestershire sauce until fully blended.
  • In a second small bowl, combine the garlic powder, onion powder, smoked paprika, dried thyme, dried rosemary, coarse black pepper, and kosher salt. Stir until well combined.
  • Using a pastry brush or your fingers, apply the olive oil and Worcestershire mixture all over the chuck roast, covering all sides thoroughly. Sprinkle the dry rub mixture generously over all surfaces and press it firmly into the meat with your hands.
  • Line the air fryer basket with aluminum foil, leaving the sides slightly raised to catch drippings. Preheat the air fryer to 390°F (200°C) for 5 minutes.
  • Place the seasoned chuck roast into the preheated air fryer basket, fat side up if possible. Cook at 390°F (200°C) for 15 minutes to sear. Flip the roast using tongs after 15 minutes.
  • Reduce the air fryer temperature to 320°F (160°C) and continue cooking for an additional 45–60 minutes. For medium-rare, aim for 135°F (57°C); for medium, 145°F (63°C); for medium-well, 155°F (68°C). Check the internal temperature starting at the 30-minute mark.
  • Once the roast reaches your target internal temperature, remove it from the air fryer and place it on a cutting board. Tent loosely with foil and let it rest for at least 10–15 minutes before slicing.
  • If making gravy, pour the drippings from the foil into a small saucepan over medium heat. Whisk in the flour and gradually add the beef broth, whisking constantly until thickened (3–5 minutes). Season with salt and pepper to taste.
  • Slice the roast against the grain into thin to medium-thin cuts (approximately ¼ inch or 6mm thick). Arrange on a serving platter, spoon gravy over the top if desired, and serve immediately.

Notes

  • Bring to room temperature: Letting the roast sit out for 30–60 minutes before cooking ensures even cooking and prevents the outside from overcooking while the inside stays underdone.
  • Pat dry thoroughly: Removing surface moisture with paper towels is essential for achieving a good crust — moisture creates steam and prevents browning.
  • Two-stage cooking: Starting at 390°F gives you a gorgeous sear, then lowering to 320°F cooks the interior gently without drying it out. Don't skip this step.
  • Use a thermometer: Every air fryer heats differently, and every roast varies in thickness. An instant-read thermometer is the only reliable way to hit your desired doneness.
  • Rest before slicing: A minimum 10-minute rest allows juices to redistribute throughout the meat. Cutting too soon will result in dry, tough slices.
  • Slice against the grain: Identify the direction of the muscle fibers and cut perpendicular to them. This shortens the fibers and makes each bite tender.
  • For leaner cuts: If using sirloin tip or bottom round, be careful not to exceed medium doneness (145°F), as these cuts can dry out quickly.
  • Add vegetables: Toss halved baby potatoes and baby carrots in olive oil and salt, then add them to the basket during the last 20–25 minutes of cooking.
  • Making gravy: The drippings are deeply flavorful — whisking in a little flour and broth creates a simple, rich gravy that elevates the whole meal.
  • Storage and reheating: Store leftovers in an airtight container for 3–4 days in the fridge, or freeze for up to 2–3 months. Reheat in the air fryer at 300°F for 3–5 minutes to preserve the crust.
